My favorite things to cook
Lately i have been on a bit of a seafood kick. I just moved to Fl. about a year ago, and while i find it rather boring, i was absolutely delighted to discover that the fishing is excellent. Ive been grilling and pan frying lots of fresh yellow fin tuna, mahi mahi, red snapper, wahoo, sheepshead, and of course the monster gulf shrimp. I also love italian food like no one knows.
My favorite family cooking traditions
The cooking side of my family is the polish side. Big feasts for damn near any occasion. Lots of butter, lots of starch, and lots of kielbasa.
My cooking triumphs
Well the latest was when i drove with my fiancee from florida to michigan for a camping trip. I brought 15 lbs of beautiful fresh yellowfin tuna and 5 lbs of gulf shrimp packed in ice. I then impressed the hell out of her parents when i made peppered tuna steaks with a wasabi lime butter in the middle of the woods!
My cooking tragedies
Bragging about a cheesecake recipe i swore i had made before (i hadnt) that called for a ridiculus amount of rum. My friend swore it wouldnt set, i swore it would...i was wrong. i tried to fold in a ton of whipped cream and quickly chill it in the freezer, that didnt work either. a few of our friends poked at the 'rum goo' and a few even tasted it...lol.

Pesto Chicken
I am skeptical of any dish I find here with fewer ingredients than star ratings. Now, that being said, this one kicks @$$! Didn't change a thing and it was perfect!

French Toast Casserole
Excellent recipe! I added a few things that other people had suggested. Added: 1/2c of vanilla coffee creamer, about 2 T of Brandy, sprinkled with brn sugar, and added about 1/2c thawed bagged blueberries. I cut the bread cubes to about 1-1.5" and used a little more than suggested. I added an extra egg and some more milk to compensate and had no problem with mushiness. Maybe that was also due to using a 9X13 pan and keeping everything on a single layer. Baked 35min @ 375. Definitely going on the Breakfast for Dinner (or 'B for D' as it is known in our house) menu!

Rubbed and Grilled Pork Loin
Well done, Chris! This DOES take me back to the Gulf Coast! I followed this to the letter (but used smoked paprika), and it just ROCKS! This is going in my recipe box, and you will have to forgive me if I forget to give you credit when my wife finishes raving about it!
