Been in the food service business on and off for 20 years now. Looking into finally starting my own catering business next 3 years or so. Anything on the grill. None handed down. Making my own to hand down!!!!!! Ribs!!! Finally got it looking AND tasting like the pros! Had friends over for dinner. One of my friends was from Englnad, never really had genuine BBQ. Was doing a beer can chicken with cheese brats for an appetizer (his choice, not mine). Got both on the grill at the same time (1st mistake). Put lid down, no clue why I did it but I did (2nd mistake). Then went in house (3rd mistake)to get beer. Got back out and had blackened chicken and VERY blackened brats. My wife (hell, my right hand woman) saved my butt by having chicken thawing for dinner for the next day. So it wasn't a TOTAL loss!!! Ended up having excellent grilled chicken breasts!
