Pumpkin and Sausage Soup

I absolutely adore this soup. I use canned pumpkin and then use a hand blender right in the pot to puree the sausage and onion pieces. I've served this to several guests now and everyone raves. Outstanding, thanks for the recipe!

Baked Tortilla Chips

I really loved this recipe--you can do so much with this to satisfy a sweet (cinnamon/sugar) or salty craving. We used whole wheat tortillas and they are great. I recommend watching closely until you have your recipe perfected. Ours were done in about 10 minutes.

Creamy Chicken and Rice Soup

This is fairly good and can be accommodating to adjustments. I only had a little over a cup of butter on hand, so I supplemented with heart-healthy margarine. I also added about 3/4 cup carrot diced small to add color. Only had a cup of brown rice, so supplemented with white. Used skim milk because this is all we have on hand. Still good!

Brown Rice and Black Bean Casserole

Fantastic! I can't imagine this recipe with anything but cheddar. Lowfat cheese makes this dish an outstanding healthy option for our family! Try serving with a spoonful of salsa and dollop of fat free sour cream.

Slider-Style Mini Burgers

We loved these! So, so tasty and very easy. Used the King's Hawaiian rolls from the deli section of the grocery. We served these at a party. Since I wanted as little prep as possible the day of the party, I browned the beef w/ soup mix the day before and put in a tupperware. The next day, I threw the meat mix in the microwave for a couple of minutes while I got the cheese and mayo (among other party fixings) ready to go. Mixed everything up, put it on the rolls and popped in the oven. My husband raved--said it was way better than Krystal burgers! I'd definitely make these again, especially for a football party or the like.

Downeast Maine Pumpkin Bread

Holy heck. 10 stars!! Amazing and so moist! Followed the recipe exactly and added some dark chocolate chips because I love the taste of pumpkin and chocolate together. Used 2 9x5 pans and had to do about 70 - 75 mins. There's nothing better than the smell of this bread baking in your house!

Roasted Red Pepper and Tomato Soup

This was truly a delicious soup. I embarked upon making this without reviewing how much time it takes! As others have stated, it is very labor intensive but worth it. I found it to have plenty of flavor. Served with a batch of grilled cheddar cheese sandwiches baked in the oven. Would also be delicious with some big, homemade garlic croutons.

Zippy Tuna Salad

I must admit that the thought of pineapple and tuna together didn't sound appealing at first but was willing to give it a try. This was really, really good!! I was even out of celery and my husband hates nuts in his food but I'm sure the recipe is even better with these things included. Thanks for the tasty new way to try tuna salad!

This was really, really good and moist. Unfortunately, I didn't have nuts on hand but added a little extra oatmeal. I'll try applesauce in place of shortening next time as other reviewers have done.

Bacon Wrapped Barbeque Shrimp

My husband and his friends ended up at our house after a golf outing and these were inhaled. I got to try one before they were gone and personally thought they were too salty--probably due to the combination of BBQ seasoning AND bacon which is already salty. I think I'll try a BBQ sauce marinade for the bacon (as suggested by others) for future tries. A sweet BBQ sauce mixed with the salty bacon is probably really good! I did flip these 1/2 way through.

Country Breakfast Casserole

We loved this recipe!! I don't even like sausage but everyone else does so I gave it a try. It was delicious! I had to make a couple of changes--used regular onions because I didn't have green on hand. Also cooked some frozen sausage patties and cut them up because I didn't have the other type on hand either. Oh my gosh..my kids, husband, inlaws and I gobbled the whole casserole in one sitting. I served with the Honey Fruit Salad recipe from this site which also took very little time. Spectacular! We'll definitely make this again.

Baked French Toast

SO very good! I used a loaf of Hawaiian bread and cut slices about 1.5" thick. Made in about 10 minutes and set aside for company the next morning. Upon recs from other reviewers, I only did 6 eggs, 1.25 c milk, 1 c half and half. Flipped slices about 30 minutes into the process and baked for another 20 minutes. Delicious with some oven-cooked bacon.

Honey Fruit Salad

Sweet Restaurant Slaw

Delicious, easy, loved it. Served with rolls and the "BBQ Pork for Sandwiches" recipe from this site and had a great make-ahead meal for company trickling into town one evening. Everyone could just serve themselves as they pleased.

Flavorful Flounder

Oh my goodness, delicious! I didn't have time to get the grill going so I baked at 350 for 10, put on the topping and broiled for 5. No green onions, so just minced a tiny amount of yellow onion. I didn't end up using all of the topping, just a light coating. Just wonderful!

Pumpkin Pound Cake

Very moist, delicious cake! I substituted 1/2 cup of butter for a portion of the shortening since I didn't have enough shortening on hand. I added semi-sweet chocolate chips to the batter instead making a glaze. Yum!

Ice Cream Sandwich Desserts

Absolutely delicious!! I made a scaled down version the first time around. Followed the recipe exactly, just made it smaller in a loaf pan. The second time I made it was for my brother's birthday. I did the bottom layer with sandwiches, then a jar of hot fudge sauce, then a tiny jar of peanut butter (melt for about 30 seconds first to make it easier to spread). Then 1/2 of the whipped cream mixture. Then another layer of sandwiches, a jar of caramel sauce then the rest of the whipped cream. I chopped up 2 peanut butter cups to put on top. So rich and so good!

Perfect, just what I was looking for! I would probably omit the sugar if your strawberries are really sweet--mine were! Otherwise, I bet Splenda might do the trick with less calories.

Caramel Shortbread Squares

Absolutely amazing! Upon reader suggestions, I chilled each layer before adding the next. I lined the pan with parchment paper to avoid the sticking problems that others had mentioned. Once the last chocolate layer hardened, I removed from the fridge and used a large knife to cut all squares. I store squares in a tupperware in the fridge. This makes it ideal for making ahead for a party, etc. Thanks for the recipe!

Microwave Spiced Nuts

These are excellent and so easy. I toasted walnuts in the oven for a few minutes to make sure they were nice and crunchy. Also added a bit of cayenne to the butter mix to give a subtle bite. Added a light sprinkling of salt after the nuts were resting on the paper. Delicious! I'm packaging these for the family this year instead of all those Christmas cookies.
