Easy Chicken Enchiladas
Easy, excellent recipe. I substituted a can of fat-free refried beans and 2/3 cup salsa for the cream cheese and pinto beans, and added about 1/4 cup shredded cheese to make it creamy when melted. Made one enchilada for my vegetarian daughter before adding the chicken for everyone else. Used half a can of enchilada sauce in the bottom of the dish, then poured the rest over the enchiladas once they went in. Toppings I had ready on the side: sour cream, salsa, chopped fresh tomato, sliced black olives, chopped green onions and fresh guacamole made from one of the many recipes on this site. Everyone enjoyed it. It's the first time I've made enchiladas, but it won't be the last! Thanks for the recipe. :)
