Chuck's Favorite Mac and Cheese

This is a super yummy and EASY recipe! I served it at a family dinner and everyone loved it. Next time, I might try a cheesy top instead of the crumb top. I made the recipe exactly as directed, and sprinkled some Parmesan cheese on top. Dee-lish! We'll definitely make this again.

Country House Bed and Breakfast Casserole

Really great recipe! Used Morningstar sausage patties instead of ham for a veggie option, and it was dee-lish! Super easy recipe, and perfect for popping in the oven on Christmas morning like we did!

Janine's Best Banana Bread

Oh my stars! This is the BEST banana bread I have had in years! When I made my loaf, I combined the butter & sugar, and then in a separate bowl I used 4 instead of 3 VERY ripe bananas(would have thrown them out they were so black if I had not made this banana bread)and combined them with the beaten egg before adding to the butter/sugar mixture. I ended up baking mine for about 1 hr and 10 minutes, or until the toothpick came out clean. It popped right out of the pan and-well, YUM! Very moist and flavorful. Thank you Janine for a great recipe! (I added the picture so you can see what mine turned out looking like)

Snow on the Mountain II

I really liked this recipe, but my family wasn't that thrilled with the strange combination of foods...the flavors go well together even though they are so different...it is a 'fresh' tasting asian style flavor without being stir fried..really easy and quick to put together...the recipe calls for too much of the sauce I think, so next time I will cut that part iin half. I left out the pimentos and it was good without it, but the saltiness of the pimentos would probably be good too! Over all i really liked it and loved how quick it was put together. I will make it again, but likely not with my kids around :)

Grandma's Slow Cooker Vegetarian Chili

This was a great recipe! Perfect for a quick prep meal to leave behind and come back to later! I made a few revisions--I added a 28 oz can of crushed tomatoes instead of the 15 oz. And I also added a packet of McCormick chili seasoning instead of all the little measurements in the recipe. I also used a red pepper instead of a green pepper. The recipe makes great leftovers and it's very filling. 8 servings seems just about right with the basic recipe. Fills the whole crock pot. This would be a very easy recipe to modify and add cooked ground beef or cooked veggie ground round to for a bit more 'oomph'. A nice low cost meal that carries over to the next day very well. We added a dollop of sour cream and approximately 1 tablespoon of cheddar for a garnish.

Chinese Green Bean Stir-Fry

I can't believe I was able to make this delicious asian dish! I've never tried making anything like this before, and it turned out marvelously! I scaled it back to 4 servings and, since I don't have a wok, used a great big fry pan--it worked great! I covered it for the last 10 minutes and let it 'steam' and it seemed like it cooked the string beans more thoroughly.

Chili Potato Burritos

I've read lots of the reviews under this recipe and have taken to heart a few things that really helped..first..this recipe for 4 servings needs an 8.5 x 11 pan to fit all the roll-ups into..and second...definitely needed more spice...so, what I have done to cut corners a bit is added 3/4 pkg of taco seasoning (I bet chili seasoning would work great too) and still added the garlic. I also added a small amount of corn, but next time will double it (I suggest about 1 cup). I also added lots more enchilada sauce--actually the whole jar! My husband's comment was, "You can definitely make this one again!" My daughter's comment was "Just a little too spicy"...but then again, she did eat it right up! :) To go with this recipe, I made the 'Salad de Colores' found on this website--and the two go marvelously together!

Tomato Alfredo

This recipe is a huge hit with our family! Super easy and quick to prepare--great for summer with fresh flavors..I used a can of tomatoes with basil and oregano which gave it a little extra zip...I served it with caesar salad and voila! Next time I make this dish, I think I'll try adding some cooked sausage to it (vegetarian or non vegetarian), and maybe increase the sauce a bit to cover the sausage.

Spicy Potato Soup I

I'm not quite sure if I did something wrong in the preparation of this soup, but this was not a very good 'soup' at all..it was basically potatoes, peppers a few seasonings and some water. Not much flavor, and certainly not worth the time it took to prepare...the potatoes took quite a while to brown and I would say prep time including the browning of the potatoes was at least a 1/2 hour or so. Actual cook time/simmer time was about 35 minutes as stated...other ratings show that others have enjoyed this recipe, but we didn't like it...we ended up draining off the liquid and just having the potatoes and peppers with a dollop of sour cream..

Whole Wheat and Honey Pizza Dough

This is a very delicious and healthy pizza dough...It was very easy to whip up (I made 3 batches one right after one another in a matter of minutes) and while I prepared my toppings, I let the dough rise--by the time I was done the dough was ready for rolling out~ ...a great alternative to delivered pizza!!

Layered Spinach Mostaccioli

This is a very quick and easy-to-prepare meal that just about everyone will enjoy-the spinach gives it a 'florentine' Italian flair. The only thing that I would modify in the recipe is to add less spinach..not everyone in my family liked all the spinach (I did though), but it is easy enough to pick out if need be. This recipe would also be really good with vegetarian sausage added...also makes great leftovers!

Greek Potato Stew

This was really a fun and easy recipe! I was pleasantly surprised that it wasn't oily~but had almost a creamy texture from the potatoes and tomatoes. My overly picky daughter didn't like it but everyone else in my family liked it...we sprinkled about a tablespoon of feta cheese on the top of it which brightened it up and gave it some zing.

No Bakes

Oh my stars! This recipe is DEE-LISH! The crunchy peanut butter makes all the difference! I added a few extra crushed nuts to mine and it was very good...I have found that if I don't double the recipe, the batch turns out better..I'm not sure why but the cookies end up with a nice glossy finish this way! :)

Mexican Pasta

This recipe is an incredibly yummy quick dish! Very healthy and high in fiber~ and quite delicious. The standard recipe is for 4 people but it made a huge batch--more like enough for 6 people. I would like to try substituting the pasta for rice next time..I bet that will be delicious also!

Taco Soup III

This is an absolute must have recipe. Although the name is "Taco Soup III" it's really more like a chili. Very high in fiber! The standard recipe is for 6 servings, but this made a HUGE batch-more 8 servings. This will become a staple in our household!
