Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is wonderful. The flavors are great yet very subtle. I used butternut squash that had already been baked instead of the sweet potato. I put it in for the last 5 minutes of cooking. Like others, I did not puree the soup. I also used sour cream. My husband ate two bowls.

Three Sisters Soup

Great soup. I used a mixture of chicken broth and water with some chicken bouillon. That was only change. Not that it was necessary. Added some salt to taste. This is not a spicy soup, but it is very flavorful. As much as I love spice, not everything has to be spiced up. This was my first time to make it and there were no leftovers. I will be making this regularly as it is so good, so easy, and even healthy! (I buy the butternut squash fresh but already peeled and cut. I then dice to the size of cubes I want. Big time saver.)

Awesome Pumpkin Pie

Not good. I tried it with the Stevia Extract in the Raw because I had it on hand. But there is a different Stevia product that I like much better. I may making a pie with that.

Spinach Bars

A delicious and easy dinner, lunch or breakfast dish. Lots of flavor. Highly recommend this dish. I like how the butter in the pan makes the edges nice and crispy. I'm eating leftovers for lunch right now. I made minor changes. I sauteed the onion, garlic, and mushrooms before adding them to the mix. For those who care about the glycemic index, I also replaced two tablespoons of the floor with Hi-Maize resistant starch.

Mini Crab Cakes with Creamy Picante Sauce

I made this with a can of salmon and panko breadcrumbs. Delicious. I also used lemon juice instead of lime, but next time will try the lime juice. The picante that I used was very hot so I upped the proportion of mayo to picante. I liked this recipe much better than my usual salmon cake recipe and so did my husband.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

Over the top good! I thought the sauce was good as I was preparing this. But when I tossed the pasta with the sauce and the goat cheese it went from good to great. The goat cheese really added a yummy zing and a little creaminess. I used Chinese eggplant because no need to peel it at all.

Calabacitas con Elote (Zucchini with Corn)

I don't normally like zucchini and even I thought this was great. Only because of time constraints, I substituted frozen corn and a small can of green chilies. I had some great home-grown tomatoes on hand so I used those instead of roma. I am sure I would like this even more with fresh corn and a fresh poblano pepper. But this was easy and delicious. My husband loved it.

Garbanzo Bean Tomato Salad

What a wonderful dinner I just made with this salad as the main dish. This is so easy and perfect for summer. I bought some really tasty home-grown tomatoes and cucumbers at a local market. The only changes I made to the recipe was I used olive oil, two tomatoes and one cucumber. I served this with cheese toast.

Tomato-Cream Sauce for Pasta

Hard to believe a sauce this good is so easy. Great flavor. I did add a little anchovy paste and a few flakes of red pepper. I use Stevia instead of sugar. But the recipe needs no changes. Love it over small penne pasta. I think the consistency is perfect when made with cream. This makes for a heavenly vegetarian meal.

Vegetarian Cottage Cheese Patties

I was a little skeptical about this recipe, but the reviews were so good I tried it. This is delicious. I used regular rolled oats as opposed to quick cooking. Because some people felt the recipe was a little salty I used low sodium mushroom soup.

Yellow Squash Patties

GOOD, good, good and easy, too. And I don't normally like summer squash. I halved the recipe and used both yellow squash and zucchini. I made a horseradish sauce to serve with them. Sour cream, mayo, horseradish, couple of drops of hot sauce, and a teaspoon of sugar. But I also tried putting catchup on my patties and I loved that.

Easy Mashed Potato and Roasted Vegetable Enchiladas

This was so good. I made a few changes and made about 1/2 the recipe into a layered casserole, but the basic recipe is what made my dinner tonight a big hit. I used cauliflower, mushrooms, red bell pepper, and carrots. I also boiled a potato and lightly mashed it. Roasted veggies and enchilada sauce plus cheese is a great combo!

Cauliflower with Dijon Sauce

Delicious. I put it under the broiler for a few minutes after putting the cheese on top. We eat most meals meatless and I'm always looking for new and easy veggie recipes. This is a keeper.

Broccoli and Onion Casserole

I loved this. And it was easy. I used two 12oz steamer bags of broccoli. Cooked them in the microwave. I sliced one large onion and cooked that in the microwave with a couple of teaspoons of butter until tender. Made the sauce as written except added 1 teaspoon of dry mustard and salt and pepper with the flour. The breadcrumbs and cheese made a nice crunchy topping. This all fit into a 7x11 pan. Just because I had some, I sprinkled some sliced and toasted almonds on my serving. I am not a fan of the green bean casserole that is often served at Christmas. I'm bringing this to the next holiday get together.

Vegan Red Lentil Soup

Delicious! My first time to make a curry dish. I used fennel seed for the fenugreek seeds. I also used chicken stock instead of water. I think water might have been better. Will try it that way next time.

Sweet Potato Minestrone

Delicious and just what I was looking for, a yummy vegetable soup with sweet potatoes. I did add a little sweet chili sauce (Mae Ploy is the kind I like). Just enough for a hint of heat. I also used a small can of tomato juice in place of one cup of the broth because I wanted to use it up. I think the combo of the sweet potatoes and the garlic really makes this soup.

I had never heard of this dish. Glad I tried it. So good! I did what other reviewers suggested and sauteed the cabbage and onion. No steaming. Also added a dollop of sour cream to each serving. I used bow tie pasta because that's what I had. I like this much more than mac and cheese and it's easier, too.

Stuffed Green Peppers

What a delicious and easy way to serve stuffed peppers. Red bell peppers were on sale so I was looking for a new way to stuff them. I had 2 peppers and cut them in half to stuff as boats. I reduced the other ingredients accordingly. I think the Swiss cheese was a great idea in this recipe. I used a teaspoon of taco seasoning instead of chili powder. I did cover the dish with foil for baking. I liked spooning the heated tomato sauce over the peppers after baking. Thicker sauce that way. I might mix a couple of tablespoons of the tomato sauce into the rice and bean mixture next time but I am not convinced that will make much of a difference. Very tasty, fits our eating plan well, and so easy -- I think this will become a go to recipe for me.
