About this Cook
My Dad was full Italian and my mother was southern, so cooking is in my blood and synomomous with love! I love allrecipes.com and have found some excellent recipes here!
My favorite things to cook
I love to bake! I also enjoy trying out unusually named recipes! I enjoy making chicken or beef recipes. In addition, soups, stews and casseroles.
My favorite family cooking traditions
My grandmother on my Dad's side taught me how to make home-made pasta along with the family recipe for the sauce! My Mom would always slow cook creating tender chicken and pot roasts. During the holidays, I always relied on my traditial recipes, but enjoyed trying new side dishes and desserts.
My cooking triumphs
I would have to say pie crusts! my cakes turn out pretty good as well! My home-made dinner rolls were always a hit at Thanksgiving! I did throw together some leftovers in a crockpot to make a soup, and it turned out surprisingly well.
My cooking tragedies
It all depends on the recipe. I am the type of cook that follows a recipe to the T. I remember making a buttermilk chicken recipe once and it turned out awful! In addition, I need to practice the art of tempering. I tried unsucessfully to make homemade chocolate pudding. I did not temper the eggs correctly and needless to say the pudding was not smooth!

Citrus Cheesecake
I can understand why this recipe got 5 stars! This was my first cheesecake and I made 2 mistakes. 1. I need to practice more on making the crust, and 2. I could not wait the overnight refrigeration! Nontheless, this cake was wonderful. The glaze turned out perfect! This cheesecake recipe is definately a keeper! I will be more patient the next time I make it so that it will set up better. An absolute elegant dessert!

Easy Morning Glory Muffins
Moist and not too sweet! I was concerned because I could not find unsweetened coconut and used sweetened instead. Just like another reviewer, I am a stickler for following a recipe to the letter the first time. The only other change I had to make was in the baking time. My muffins took 30 minutes instead of 20. All in all, these are excellent, moist, delicious muffins! Oh, and by the way, the food processor does come in handy in the prep work. I will definately make these again!

Pecan Dijon Chicken
The sauce for this recipe definately deserves 5 stars. The reason why I am going with 4 is that the cook time for the chicken seems a little short unless you pound the chicken breasts thin. I added more time to my cook time. In addition, next time I think I will try the cornstarch to thicken the sauce, I just don't want to change the taste of the sauce, it is excellent with chicken and rice. I also enjoy the flavor of the pecans! Thanks for a good recipe Brian!
