Best of the Best Blueberry Muffins

Excellent! I used frozen blueberries (didn't thaw them first) and didn't crush any of them. Can't wait until summer to try it with fresh berries!

Broccoli and Cheddar Soup

Finally...a good broccoli chesse soup recipe with no processed cheese in it! I used half-and-half in place of the milk and vegetable broth rather than chicken broth. I will definately make this one again.

Spinach Tomato Tortellini

Very good! The only change I made was to substitute half-and-half for the heavy cream. This was fast and easy and is definately a keeper.

Easy Spinach Lasagna with White Sauce

This was SO good! I cut the recipe in half and used a 9x9 inch pan. I used a 16oz. jar of Classico Roasted Garlic Alfredo and Barilla Oven-Ready lasagna noodles. I also added more mozzarella (an extra layer of it in the middle). I baked it covered for the first 30 minutes and then uncovered for the next 20 minutes to get a nice crusty top. Definately a keeper!

Vegan Black Bean Soup

This is very good. It's more like a chili than a black bean soup. I cut the recipe in half and added 1 teaspoon of salt. I also simmered it for about an hour (rather than the 15 minutes in the recipe) because I wanted the veggies to be soft.

Fresh Salsa II

This salsa was a little bland as written, but I added 3 cloves of minced garlic, some salt, and substituted lime juice for the lemon and it turned out great! I will definately make this one again.

Spinach and Orzo Salad

This is a great salad! I served it to a group of friends and everyone loved it. The only change I made was to cut back slightly on the spinach - it just seemed like too much to me. Make sure you use a very good quality olive oil and vinegar. It's a huge recipe - next time I will probably cut it in half.

Baked French Toast

This recipe turned out WAY too moist and I ended up throwing almost all of it away. I reduced the eggs to 5, reduced the milk to 1 cup and baked it for over 75 minutes but none of this helped. I definately will be looking for a different baked french toast recipe next time.

Apple Crumble Tart

This recipe is wonderful! I skipped the wine sauce and served it with vanilla ice cream and hot caramel sauce. I made 6 individual tarts rather than one big one by using a 10 oz package of puff pastry shells and rolling each shell into a 5 inch circle. It was a big hit at a recent dinner party.
