Bread Machine Bagels

Steakhouse Wheat Bread for the Bread Machine

Very tasty bread! I used the basic setting on my bread machine which made it a little dark, so I'm going to try the sweet setting and I'm betting it will be perfect. Going to make some for my best friend right now!

White Chocolate, Chocolate Cookies

Amazing recipe, a dense, brownie-like cookie that is studded with white chocolate chips. Fantastic flavor. I followed the advice of others and did a split of baking powder and baking soda and used less flour (only 1.5 cups). Will definitely make this again, but I'm gonna need to work off this batch first!!

Ricotta Gnocchi

This recipe is no joke amazing, so delicious that I'm making it again tonight. I needed about a half cup more flour than the recipe called for but you never know how the environment effects how much you use on any given day. I omitted the garlic powder and tossed with roasted cauliflower and peas tossed in a touch of clarified butter. Gnocchi this good should take days to make. Best quick dinner EVER!

Pumpkin Rice Pudding

I think this could be a stellar recipe with some fine tuning. First of all, I think the recipe should be cut in half because it makes a huge amount. But if you're going for the full batch, please use only 3.5 cups of milk like some other reviews have noted. This recipe also needs a lot more spice, at least for my taste. I added a little more of the recommended spices and used a cardamom pod while making the custard. And speaking of custard---don't put the pumpkin in until after the custard is finished because it makes it take so much longer than necessary. Just combine it at the end after you strain the custard to make sure it isn't lumpy. It's far more likely to end up with scrambled eggs rice pudding if you add the pumpkin first! Finally, this is great with homemade whipped cream sweetened with a touch of vanilla and dark brown sugar; it really adds to the spiciness of the dish overall!

Flourless Peanut Butter Cookies

It's actually a six-star recipe....this is amazing! Finally a cookie that tastes like peanut butter. No matter if I make the cookies or someone else does, I always felt they were lacking in flavor, so when I tasted these, I was blown away. Everyone who has them can't help but love them and when I tell them how easy it is, they're amazed. I amended the recipe and substituted brown sugar for white in a 1:1 ratio and added some vanilla. Out of eggs one day, I added ground flax seed and they were still great, although with a less sugary taste (figure that one out); they had a more natural flavor that was very nutty. I measure out 1 T of dough and flatten it between my palms....bakes perfectly at 325 degrees F in 9 minutes. Also, add small chunks of Ghirardelli white chocolate to the top.....delish!

Dumplings

This was so easy, and so tasty that I too feel saved now from a childhood of Bisquick dumplings. I knew not what I was missing!! The first chilly night we had this year, I used this recipe to put dumplings in my split pea soup. So much better than a side of bread or garlic toast!!

Barbarella's German Pancakes

The flavor of these pancakes is really great, but I think I should have let the batter sit for about 30 minutes before making them. The latter cakes had a better texture than the first ones. If you make these, make sure to use medium to medium-low heat and wait until the surface is no longer shiny before attempting to flip them. Also, the thinnest spatula you can find is a must! Finally, wiping the pan after every pancake comes out helps me out a lot, so you don't get uneven cooking from leftover bits of butter/oil/cooking spray.

Peanut Butter Pie XIV

Super easy to make, and fun to play with. I did not follow the recipie exactly because I was going for a dense, very peanut buttery creation. I skipped the lemon juice entirely and used only about 1/2-3/4 of a can of sweetened condensed milk. I also used about 2-2.5 cups of extra crunchy peanut butter. Finally, I started with a layer of hot fudge then alternated with the peanut butter. Make sure the fudge is really hot when you spread it on the crust otherwise it makes a mess. If you have the time and inclination, you may want to freeze the pb layer before putting on more fudge if you're concerned about making it look perfect. A great recipie!
