E-Z Drop Biscuits

Wow- my cream of tartar must have been old, because mine came out rather flat. But no one minded as the fam scarfed em down! I found this in a hurried search for something to go with my beef stew & this fit the bill. Seemed like a lot of butter, but my FLAT biscuits were tasty & kind of crunchy around the edges. YUM. Can't wait to try them with fresh cream of tartar. Thanks!

Southwestern Bean Soup

This is so much better than it seems it would be! I used bacon bits, but next time I might use bacon strips & remove before serving. I also added a can of rinsed pinto beans- gave more substance to the soup. (although it's good without- just thin.) Flavor is really great. You can add a dollop of sour cream to your bowl & mix it in, or not. Great both ways! And SO easy! Thanks for sharing.

Jeff's Chili Con Queso

Pretty good stuff! Used the whole can of chili- was out of salsa, so pulsed a can of Rotel & measured out a cup. I also added some water as it was thicker than I like queso to be.

Chicken Jerusalem I

Pretty good- not really anything special. Made it as called for- would use less wine next time. (sauce too thin & wine a bit over-powering) But it's good since it's so easy! (& low carb)

Black Bean Vegetable Soup

This was good, but didn't blow me away. I always use frozen corn instead of canned- the soup was a little watery IMO. Very healthy, though. Might want to add refried beans like others if you like it thicker & maybe some more spice.

Nanny's Spaghetti Sauce

Really good & tomatoey! Easy. I love using crushed tomatoes. I used just a little less red wine vinegar because that's all I had left & I also used 2 T. sugar. Tomatoes in all forms are very healthy!

Pat's Cream of Potato Soup

Pretty good stuff & easy. I always use bacon bits- so I just saute'd the onion in a little butter, then added the flour. Then chicken broth & bacon, etc. Definitely mash the potatoes quite well in the pan,(when done) & stir between mashings to bring up the potatoes from the bottom. Cook at least 30 minutes- maybe 35-40!

White Chocolate Gorp

YUM!!! After reading reviews & other recipes, I used Crispix, Cheerios, holiday pretzels,& a can of cashew/macadamia nut mix. Melted 2 T. margarine in a lg skillet & then added 2 bags (12 oz ea) of white chocolate chips & melted over low heat. Stirred into mix & lastly added a bag of coated mini Hershey kisses. Be sure to use a HUGE bowl & lay out plenty of wax paper. (I used the hint to tape it down.) This is so easy & good. Makes a ton & a great idea for holiday food gifts.

Asian Lettuce Wraps

Very good!!! I used ground chicken- & just browned it along with the oil,garlic, onion, & water chestnuts. Left out the green onions since I didn't have any. Combined all the sauce ingredients (including sesame oil) in a small bowl & then added to the chicken mixture. Heat through & you're done! Used iceberg leaves- dry & chill in the freezer for a few minutes to make 'em crisp! I always get honey chicken at Pei Wei, but now I can make these myself at home & it's easy! Now I see why so many order them at PW/PF Chang's. (P.S.- Used regular minced ginger in a jar)

Gourmet Sweet Potato Classic

Yummy! I used a 9x9 insulated baking pan & I think it worked perfect. I did combine the salt, sugar, & cinnamon in a small bowl before adding to the mashed mixture of eggs, vanilla, cream, melted butter, & sweet potatoes. Make sure to not melt the butter for the topping- the texture won't be right. (I nuked it a little too long to soften) Used 5 pretty big sweet potatoes & nuked 'em. (peeling afterwards) Thanks so much for the fantastic recipe. It's a keeper.

Garlic Cheddar Chicken

Tasty stuff! Chose for low carb. I melted the butter & garlic in a small skillet over low heat. It was easy to dip the chicken in this way. I also like to use a flat-type bowl or container to put the crumbs in. I always bake my chicken at least 40 minutes, but the time is probably right on if the breasts are rather thin. Thanks for the recipe!

Quick Zesty Green Beans

Well, I'm getting old. Thought I had pecans, but didn't. Used almonds instead. Forgot the recipe called for BLACKENED Old Bay- didn't have any, so used regular Old Bay. Turned out great anyway!

Baked Salmon II

I really liked this, but I messed up & used 2 large fillets that were almost 12 ounces each! I think if I had used the recommended amounts of marinade it would have been too much. I wrapped each fillet in foil & baked 40 minutes. Turned out perfect. Yummy & healthy!

Oven Pot Roast

Very very good! I screwed up & bought sweet vermouth instead. My roast was smaller, but to me there wasn't enough gravy. But since I'm watching carbs again, it works. For those who want more gravy, I advise doubling those ingredients.

Feta Chicken Salad

Easy Swedish Apple Pie

This was good, but I think if I make it again, I would use pie filling. The apples kind of dried out while baking. Using pie filling would also eliminate all the peeling/chopping, thus making it one of those SUPER easy desserts!

Creamy Chicken Breasts

Most recipes that call for "creamy salad dressing", without specifying a type, refer to Miracle Whip. So that's what I used. It was OK, but if I were to make it again, I would bake it. (with the sauce) I know it would be a lot more flavorful.
