Delicious Ham and Potato Soup

Delicious. I've never had ham soup before but based on the amount of 5-star reviews I just had to make this with some of my leftover holiday ham. I added about 1/4 cup diced carrots for color and 2 extra cups of water. It looked like it was going to be very thick with only 3. I shouldn't have done that because with the milk, the soup would have had a perfect viscosity. Taste is still fantastic! Super easy and a perfect recipe for your extra Xmas ham.

Chantal's New York Cheesecake

I have made this cheesecake for years with people begging for it each and every holiday. For sone reason this year I decided to make Alton Browns cheesecake. This is, BY FAR, much much better!! Will never use another recipe.

Basil Caesar Salmon

So easy and really good. I did use dill instead of basil and it was fantastic. This does, however, "hide" the fish flavor, so if you're trying to get kids who don't like fish to eat salmon..this is a great recipe.

Mongolian Beef I

Good, but tastes nothing like Mongolian beef from a Chinese restaurant. Tastes a little boring as written but easy enough for a fast weeknight dinner. That's why I gave it 3 stars. Probably won't make again however.

Baked Ziti II

Very good but only gave it 4 stars because the recipe calls for way too much ricotta, and this comes from someone who LOVES ricotta. I didn't change anything except adding some sausage to make it a balanced and more filling meal. Oh, I did add a little pesto to the ricotta because I needed to use it up. Don't know if it made any difference, but the ziti was very good. Will def make again, just less ricotta.

Clam Sauce with Linguine

Excellent!!!! Followed the recipe exactly and it turned out DELICIOUS! Not only is it dirt cheap, but it's really quick. The only problem I had was 16oz of pasta is far too much. Half ended up in the trash. Next time I will double everything but the pasta, and use half butter, half olive oil. Also, an extra can of whole clams added to the two cans of chopped cans would make it even better. I LOVE this recipe!!

Best Ever Jalapeno Poppers

5 star flavor but the whole process was such a pain!! Seriously guys, you're better off buying frozen. No mess and you'll save yourself a few hours in the kitchen. It is afterall, only a snack.

My first time making biscuits from scratch. Didnt turn out well, but im sure it was my fault. They were hard and heavy. Maybe I over mixed them. I will try again one day. Hopefully i will come back with a better review.

Special Buttercream Frosting

Followed he recipe exactly and it turned out great! I dont like frosting (unless its cream cheese) so I wont tell you what i thought of the taste. Doesnt matter what i thought anyway, i used it on my daughters 12th bday cake and what matters is what SHE thought. She LOVED it!! I had a hard time getting all 8 cups of sugar mixed with the shortning, but i did add about 7. The texture was a bit grainy so i added a bit more cream. Let the Kitchen-aid do all the work for a good 8 min. It was so easy to work with. I will DEF use again!!

Easy Spicy Chicken and Rice

5 stars for something so easy, fast, and when you're in a pinch and don't have much on hand. I read other reviews and so many people added cheese and sour cream THEN said how good it was. I didn't have any of those. I sautéd some onions and garlic, browned the chcken skin, then made as directed. Oh, I seasoned the chicken with Old Bay first. It took EXACTLY 45 min to cook and didn't need extra water like some had said. Very good for those nights you don't have much on hand. Bf said it was very good. He had no idea I literally "threw" it together cuz I had nothing else. Try it...it's great. And I agree, cheese would make it better :)

Cilantro-Lime Dressing

I cant give this 5 stars because i didnt use all igredients called for. I am not a fan of ginger so i didnt use that. I also do not like sweet foods so i left out the honey. The dressing was fanstastic but I felt it needed more of a "bite". Maybe my jalepeno wasnt spicy enough. I added a tablespoon more, or so, of balsamic vinager. I added kosher salt to taste. Delicious!! I cant wait for dinner to have a full salad with this dressing. I honestly dont think any honey is necessary at all. Balsamic is plenty sweet on its own. Next time i make this (and there WILL be a next time), i will use the seeds from the pepper. Everytime I make my own dressing i wonder why I dont do it more often. This is far better than any bottled dressing ive had!!

Italian Breaded Pork Chops

I didn't have any egg so I dredged in seasoned flour, then just milk, and PANKO bread crumbs seasoned with Italian seasoning. I put panko in caps because it was wonderful! This was my first time working with panko OR making breaded chops and I couldn't have been happier. This reminded me of chicken parm. I think a side of pasta would be perfect. Skip roasted potatoes, not a good pairing.

Jay's Signature Pizza Crust

Don't understand the hype. The dough was bland and boring. I even added a little garlic powder and Italian seasoning. The only thing I can think is maybe I added too much flour because it's humid right now? It does make a ton of dough. Anyone wanna come over for a slice? Update: I tried again using as little flour as possible and using sea salt instead of reg table salt. Turned out much much better. I don't have a pizza stone so I make my pizzas on cookie sheets. I wish the pieces held up like regular pizzas. Mine are soft, flimsy and need to be eaten with a fork.

Banana Crumb Muffins

Fantastic! The flavor of these muffins was superb. Very quick and easy to make. Did not change a thing. The crumb topping was far too sweet for my taste, so next time I will add a bit less to each sinfully delicious muffin. Thank you for a great recipe.

Easy Meatloaf

Fantastic! I did cook the onions before adding them to the meat. I don't care for crunchy onions in my meatloaf. I also added a few dashes of worchestier sauce. This meatloaf is better than the onion soup kind I normally make. I did think the ketchup sauce on top was far far too sweet! I think ketchup is sweet enough, the brown sugar isn't necessary at all. Besides that, this meatloaf was perfect

Penne with Chicken and Pesto

Used half & half instead of heavy cream and a little extra pesto. Let simmer for 15 min or so until it thickened. Tossed with spaghetti (all I had). Delicious! My friend, who never compliments my food, only thanks me, said "this is awesome!!". Very rich so a light salad with vinagar and oil would be the perfect side. Easy, fast and yummy dinner!

Classic Macaroni Salad

I orginally rated this 2 stars and wanted to throw out the whole bowl. What a mistake that would have been!! The first taste was terrible and FAR too sweet. After letting it sit a few hours it seemed to mellow out and it became DELICIOUS! One of the best mac salads I've ever had. I did cut back on the sugar a bit because that much sugar makes me feel guilty. I absolutly love this recipe and recommend it to everyone....just let it hangout in the fridge a few hours.

Stuffed Green Peppers I

Very good and easy. I made it even easier by using leftover mexican flavored rice from the previous nights dinner. I added a little garlic to the onions and cooked them separately from the ground beef then let it all simmer together for 15 min. I cooked the peppers for 30+ min but i dont think that was enough time. All the cheese didnt melt. I think covered and cooked at 350 it should be in the oven 45 min to get everthing nice and bubbly.

Downeast Maine Pumpkin Bread

a little sweet, but still very good. next time i will cut out half the sugar and frost the muffins with a cream cheese frosting. these practically scream out for it.
