About this Cook
I love to cook but don't seem to have as much time as I would like to do so! I use my family as guinea pigs every chance I get. Hubby and I have been married for over 11 years and we have a wonderful almost 5 year old daughter. I really enjoy baking but mainly focus on new ideas for dinner when looking for recipes. I love to watch cooking shows on TV too and am often inspired to try new twists on old favorites.
My favorite things to cook
Pasta, fish, dessert, potatoes and new sauces.
My favorite family cooking traditions
I could always count on Mom and Grandma for the best pot roasts with potatoes and carrots, steak and gravy, and fried chicken with mashed potatoes and gravy. You know, those comfort foods that filled the house with yummy smells. My Grandma is 93 years old now and you still cannot go to her house without being fed. She makes awesome desserts that are always available and the best potato rolls you will ever eat. Cooking for her has always been about making people happy and I guess that is why I love it so much.
My cooking triumphs
The mint brownies from this site are my father-in-law's all time favorite dessert. He is a man who will pour sugar on his pudding to sweeten it up! I have my grandparent's over to eat and my Grandma always says I am a terrific cook which is the highest praise I can imagine. My Mom loves my pastas and my hubby, who is no fan of veggies, likes when I try out recipes that have exotic sauces for the meat. I always love feeding the whole crowd while avoiding traditional recipes and having everyone ask me for the recipes to take home.
My cooking tragedies
I made an Elmo cake for my daughter's 2nd birthday that she loved and looked beautiful but tasted really awful thanks to the bitterness of the colored frosting. Everyone scraped off the icing and choked down a tiny piece after I worked on it until 3 AM. Most of my tragedies are about desserts as I prefer for them to look pretty and they rarely do!

Roasted Garlic Cauliflower

Key Lime Cake II
This cake was a huge hit with the family as a birthday cake! I used Patty W's recipe for a sauce over the cake while it was still hot. 1/2 cup sugar, 1/2 stick butter and 1/4 cup fresh key lime juice, simmered for 4 to 5 minutes. Then I used the glaze recommended with the recipe to top the cake once it was cool. This resulted in an extremely lime-ish and moist cake. I will say that I think the actual juice from key limes makes all the difference but it takes quite a few to get that much juice. I used a whole bag, and it contained at least 15 key limes. I will be making this again, thanks for sharing the recipe!!

Heavenly Chocolate Mousse
This was my first time making mousse and I was pleasantly surprised by the ease of this recipe. I did expect the chocolate mixture to fluff up on it's own but maybe it is not supposed to. Once you combine the whipped cream and chocolate mixtures, the flavor and consistency is really great. I did put the chocolate layer in the freezer for about five minutes, stirred and returned to the freezer for another five as suggested by another reviewer instead of putting it on ice. I also found that whipping the finished product with a hand mixer after chilling made it fluffier for serving. In fact, I used a hand mixer for the whole recipe rather than using a whisk. I topped this with sweetened homemade whipped cream before serving. Thanks for sharing!! I will be making this one again.
