Slow Cooker Chicken and Dumplings

This was wonderful!! I didn't do it slow cooker style, but rather on the stove top in a pot. Still great! I did add some diced celery and carrots. And used chicken broth like suggested. I cut up the raw chicken into bite sized bits to make sure it all was cooked evenly. A keeper!

Seven Layer Taco Dip

Great recipe - I do mine a little differently ... I mix the cream cheese with the taco seasoning for the first layer, then re-fried beans, guacamole, sour cream, chopped lettuce, shredded cheddar cheese, chopped tomatoes, sliced olives, diced jalapenos, and green onions. OK so maybe that is more than 7 layers. Disappears so fast!

Shrimp and Tasso Pasta

Really liked this! Used a package of diced ham instead of Tasso and added a couple of drops of liquid smoke. Hubby loved it and left overs were great too/

Sour Cream Enchiladas

This was the best Sour Cream Chicken Enchiladas I have found! Small changes. 8 chicken tenders, seasoned with salt, pepper, onion salt and garlic powder. Shredded after cooking. Returned to pan with a can of rotel and warmed through. I didn't put the cheese inside. The rest was just the same. Soooo Yummy!

Broiled Tilapia Parmesan

Super Good! I cook it in a deeper, smaller dish so that all the fish filets are touching. This makes seems to make more sauce, guess it doesn't cook off this way. So yummy!

Pizza On The Grill I

This was incredible! My husband raved over it and loved that he got to do the grilling part ;) Would be fun for dinner guests to be able to top their own pizzas. Give yourself plenty of time to make the dough, was well worth the effort. Even picky 3yo ate 2 pieces!

Vegetable Lo Mein

Excellent! Hubby and I gobbled it up! I didn't have any curry powder so that got left out. Also didn't add the honey. Used jarred ginger. Doubled the sauce cause we like it saucey! Bought fresh, cut up, mixed veggies from produce area. And added 1.5 lbs of shrimp at the end. Yum!

The Real Mojito

OMG! Yum!!! I used 1/2 lime, sliced fairly thin. 1/2 part Simple syrup (1 cup sugar & 1 cup water - warmed enough to help the sugar melt) 8 or so mint leaves; muddled together; then 1 part rum, 3 parts club soda. Then ice to fill the glass. These babies don't taste strong but watch out!

Romantic Chicken with Artichokes and Mushrooms

Great Recipe and easy to make. I used left over grilled chicken and sliced it up other than that stuck to the recipe. Changes for next time: add more mushrooms, thicken the sauce and serve on egg noodles. The flavor on it's own was great!

Crawfish Chowder

Seriously! Wow!! Very few changes. Added some fresh potatoe (1 baker pealed, chopped, cooked) Used the frozen Walmart Crawfish. Cut back on the butter. Used FF half & half, added extra cream cheese. This was so yummy! Even my 2 yo was dipping bread in it. Is a keeper!

Yum, Yum, Yum! Made a few changes and got fabulous reviews. Reduced amount of poultry seasoning to a little less then a ½ a tsp, lost the cheese and water chestnuts, changed from green to red grapes, and added a ¼ cup walnuts … and the magic ingredient – Cool Whip! I added about a cup. Mixed it all together and Wha-laa!

Chicken Tortilla Soup I

Great Recipe even though I did make a bunch of changes. My husband ate 3 bowls!!! Changes are ... Took out hominy. Added chopped yellow & green squash, 1 cup instant rice, 4 cups of chicken stock, chopped red & green bell peppers. It made a lot but I froze part of it. The last change I will make for next time is using 1 can diced tomatoes instead of crushed. I used so many veggies because it's the only way I can get DH to eat them! Terrific! A keeper for sure.
