Trini Style Chicken
I've made this recipe several times now. What an interesting method of cooking. My family enjoys this as well.

Avocado Feta Salsa
I used previous suggestion and added cilantro instead of oregano. Then grabbed blue cheese instead of feta by mistake. After a slight panic, tried the recipe and it was fantastic. Recipe is very flexible. Took to tailgating party with baked pita "chips" and was a big hit.

Bacon and Potato Soup
Loved this soup. I did make a few changes - added garlic, deleted cheese and, because I served this for New Year's Eve, added fresh black eyed peas. Many compliments. I did use precooked bacon as well.
