BBQ Chicken Pizza I

Green Bell Peppers stuffed with Tomato Lentil Couscous

Easy and delicious. I used less than the recipe called for and still had leftovers after stuffing 6 halves of peppers. I used half a jar of sauce and 1 can of diced tomatoes to the mixture and 1 can ontop of the pepper halves before cooking and halfway through. I also only the leftovers of the couscous and it was more than enough. All 3 kids + husband ate it up! great recipe!

Sweet, Sticky and Spicy Chicken

Fantastic! Husband said it tastes like we ordered take-out. Minor modifications: I had no honey so I used maple syrup - the real kind, added sweet peppers & carrots, doubled the sauce and used cayenne pepper (less than 1/4 tsp) instead of the red pepper flakes. I think the siracha hot sauce would be even better. Loved this and will be making & passing along to friends!

Taco Seasoning I

No need to buy the packs of seasoning any longer! Fantastic blend of spices. I doubled it and used about 3tbsp for 1 lb of ground turkey. Makes me feel good knowing what is exactly going into my dish. Thanks for the great recipe.

Mexican Baked Fish

Great recipe. Fast and easy to prepare. I gave the option of eating as is or putting it in a tortilla for a fish taco. The only thing it was missing was a little lime. Husband asked for this one again. Nice change from the usual cod recipes I use. I will keep this one for sure.

Scrambled Egg Muffins

Easy and versatile! I loved the idea of this recipe. I added bacon, shredded cheddar, & leftover diced chicken florentine (spinach and chicken). Cooked for about 20 minutes and it was perfect! All kids ate it and they looked very cute. I will be making this and passing it along. Great idea!

Chicken Florentine Casserole

Tastes good, looks good and all kids ate it! I omitted the mushrooms because I didn't have any and used whole milk instead of 1/2 & 1/2, finally I cut the breasts into thin pieces and only used 2 whole breasts (4 thin slices), I also took the advice to saute the spinach with onion and garlic before hand. I only wish I had used fresh spinach, all I had on hand was frozen. I served it over a thick slice of french bread for a nice variation. I was shocked when my 1 1/2 yr old ate the entire plate!

Angel Hair Pasta with Shrimp and Basil

5 stars because all of my children ate it without complaint! I used tomatoes I'd frozen from the summer - diced and pureed. Basil I'd pureed and frozen from the summer, some oregano, parsley, garlic and a dash of salt/pepper and season salt. Simmered until some of the water evaporated then I added the shrimp right at the end. Served with grated romano cheese - Delicious! I can't wait for leftovers tomorrow!

Cheddar Bay Biscuits

Nice change from italian bread at dinner. I only used 2 cups bisquick and enough milk with the decrease. I also added garlic powder and parsley to the mix. Melted the butter with more garlic and brushed on when done. The only change would make is to add more cheese - we didn't think they were cheesey enough.

Baked Potato Soup

Delicious soup! Family raved even my 19month old ate 2 helpings. Definitely a keeper. The only modifications I made were boiling the potatoes in the stock, adding leftover cooked carrots to up the veggie content and cheddar cheese, then I pureed most of it and added it back to the pot. With the turkey bacon, dollop of sour cream, chives and cheddar cheese on top it was out of this world. I also made cheddar biscuits to go along.

Parmesan Fondue

Fantastic recipe, received rave reviews and it makes a ton. Altered slightly only because I picked up the wrong cheese at the store - a mix of parmesan, asiago and romano. Also added a few slices of swiss. I will be passing this along and keeping for the next time I need a nice appetizer. I served with sourdough and brown bread bowls. Next time, I will chop up some chives for a pretty presentation.

Buckeyes I

So good, I had to give the majority away for fear of eating them all myself! The only trouble I had was with the technique of getting the chocolate to look nice. Some of them were pretty interesting looking. Definitely need to keep the pb balls frozen, as soon as they start to get condensation on them the chocolate would not stick well. Will keep and make every year!

Chicken Pot Pie IX

Excellent recipe. Slight modifications to our tastes. I added some garlic & herb seasoning, green beans, corn and cream of celery to help thicken. I used more chicken stock because of the additional vegetables it would have been too dry. The entire pie was completely gone and my husband wants this again and again. Luckily with the extra broth and vegetables, I have enough left over for one maybe two more pies! Delicious!

Delicious Black Bean Burritos

Great recipe, a hit with the family even my 17 mth old ate it! I altered it a bit by adding fajita seasoning, green peppers, fresh garlic and a bit of sour cream to the mixture. I will be making this again - minus the fajita seasoning, I think it was too overpowering for the dish.

Braised Balsamic Chicken

Very good recipe. I modified per another reviewers suggestions. I added onions, mushrooms and fresh garlic also a bit of brown sugar to help caramelize the onions and mushrooms. I mixed the vinegar which I cut down a little with the tomatoes and spices then added that. I served with rice. Everyone in the family ate it without complaint. I will continue to make this dish.

Italian Wedding Soup II

Good soup for a warm day. Easy too! I made in my crock-pot, broiled the meatballs (used turkey) for a few minutes, added a bit of oregano and also mixed 2 eggs + a few tablespoons of romano cheese and swirled it into the soup for 1 minute. Made a few mistakes, put the onion in the soup instead of the meatballs and added garlic which should have gone into the meatballs as well. But overall, a good recipe!

Restaurant Style Mac and Cheese

Creamy and easy. Will definitely be making this over kraft! Only modification was using american cheese slices instead of the processed cheese and also chunked up cheddar. Very good recipe!
