Four Cheese Macaroni

Reviewed: Nov. 30, 2009
sadly disappointed.. I wanted a change from my vamped up over the rainbow mac & cheese so I tried this because of the high rating.. very bland and it still was cake like even w/o the eggs.. It's too bad, I had high hopes for this.

exactly what I remember when I was a kid! Forget the oil, use butter so you don't have to wait the hour.

California Italian Wedding Soup

amazing soup! The meatballs are perfect and the lemon is a must! I doubled the broth and put 1 1/2 times orzo in the soup. Thicken the soup with a couple dashes of parmesan cheese at the finish.. A+++++

Refried Beans Without the Refry

Reviewed: Sep. 13, 2009
Cumin isn't an option its a must and much more of it! I add almost 1 tbsp of it along with 1 tsp of taco seasoning for more flavor. Love refried beans (all recipe search enchillada sauce for a topping, and add a tbps of cheddar and you've got pintos and cheese) freezes well, a great meal, a great appetizer, etc etc love it!

Black Bean and Salsa Soup

Reviewed: Feb. 18, 2009
this is the best and easiest soup ever! I added a can of corn and also an extra can of black beans (kept them whole). I also followed other reviews and added lime juice, more cumin and topped it with avocado. Delish!!

Sturdy Whipped Cream Frosting

Reviewed: Feb. 18, 2009
great frosting, if I would have used it for frosting? this is unbelievable, so light and wonderful. I used some of it (added a few dashes of ground cinnamon) as a fruit dip with sliced bananas (friends said it tasted like banana bread with cream cheese) and the rest was dipped with chocolate covered strawberries.. absolutely sinful!

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 3, 2009
this was good! I cooked it overnight, let the chicken shred into the mixture and used a jar of medium salsa instead of diced tomatoes. I also took the cover off toward the end to reduce the liquid and served it over rice and on top of nachos during the football game, big hit! :)

Whole Wheat Beer Bread

Reviewed: Oct. 11, 2008
dh (a.k.a. the beer snob as I call him) recommended New Castle Brown Ale to accent the flour in the bread (this coming from someone who only eats frozen food if I'm not home) anyway, the bread came out great! I made 3 breads the first time, then changed the brown sugar to a semi-packed 1/2 cup for the next 3 beers and it was PERFECT! So similar to Tastefully Simple wheat beer bread! Tomorrow I'm picking up a 6 pack of Harvest Moon Pumpkin Ale for a great fall beer bread and still plan to keep the brown sugar at 1/2 semi packed, can't wait!

Easy Vodka Sauce

Reviewed: Oct. 11, 2008
LOVED IT! this is one of my favorite meals and this recipe is so close to an Italian Restaurant in Howard Beach Queens, I added garlic when sauteeing the onions and crushed red pepper flakes at the end with a few dashes of grated parmesan to bring it closer to the restaurant taste I love. Delicious!

Best Black Beans

Reviewed: Oct. 11, 2008
I doubled this and now wish I quadrupled it! I sauted onion, garlic and cumin in evoo, added rinsed beans (can't bring myself to cook them in the canned liquid), added 1.5 chix broth, cumin, cilantro, smoked paprika, TS si si cilantro seasoning and sea salt. Slow boil (covered) for an hour then took the cover off and let the liquid reduce to none so the moisture was packed into the beans! This was suppose to be the shredded beef side dish, too bad they're gone! excellent recipe!!

Taco Seasoning I

Reviewed: Sep. 28, 2008
if you change the servings to 40 it will fill a spice jar (the ones you buy in the spice aisle). this is great and better for you than ol el paso (no msg and other chemicals). I change the crushed red pepper flakes to cayenne for more of an authentic mexican seasoning.

Peanut Butter Fingers II

Reviewed: Sep. 28, 2008
so is it bad that I made these last night and after tasting them I hid them in the back of the fridge hoping no one finds them?? WOW these are good!! Listening to other reviews, I melted the butter and added the sugars to melt (I used splenda brown sugar and xylitol instead of sugar to make them as a sugar free version), used sf hersheys dark chocolate, chunky natural pb for the topping and cut them into brownie size squares so I don't over indulge. SOO GOOD!!

Chocolate Toffee Crunch Bars

Reviewed: Sep. 27, 2008
YUMMMM!! I made these for a bake-sale as a "sugar free option" and they were gone in less than 10 minutes! Do yourself a favor, buy a box of crushed graham crackers (they're sold in the baking aisle)to save time and aggrivation of crushing crackers. I used splenda brown sugar and sf hersheys chocolate bars (chopped them up) for the top. unbelievably good!!

Cheddar Beef Enchiladas

This was a HUGE hit in my house! Don't worry about measuring the mixture per tortilla, fill them up, roll em and put them in the dish seam side down. If you only use 1/4c you'll have tons left over. Great re-heated too!

Alyson's Broccoli Salad

Reviewed: Sep. 27, 2008
Loved this recipe!!! I went to a work luncheon and this was served there. When I got home I found this recipe, made it the next day and it was exactly the same! Great flavor and stores well (keep the bacon and seeds out until before serving). My only suggestion is using "thick cut" bacon, it added a little more of a crunch. Great salad for parties, I've made it atleast 4 times since!

This JUST came out of the oven and I can't begin to explain how good this is! I followed everyones sugestion by going with 1 1/2c flour (I used whole wheat pastry flour) but also used xylitol instead of sugar.. Incredible flavor, so light and cake like!

Fantastic Focaccia Bread

Reviewed: Apr. 26, 2008
Im with a few other posters about this being more of a flat bread than focaccia, but it could be because I used whole wheat pastry flour (which you're suppose to be able to sub cup for cup against white flour). It didn't rise, just kind of stayed in a solid ball (like cookie dough). I did knead it for 7 minutes each ball, a kneading hook sounds more efficient for this task! I added roasted garlic to it which seemed to help combine it along with basil and sea salt. cooked it on pizza stone for 15 min, it didn't rise while cooking, but still came out tasting great! Delicious with a bread dipping oil!

Quick and Easy Alfredo Sauce

Reviewed: Apr. 21, 2008
UNBELIEVABLE! Can we get more stars for this recipe?? :) I have to admit, I wasn't sure about this recipe and expected a cream cheese taste to it, not only that but I thought 6oz of parm had to be a misprint. I used butter and sauted 4 cloves of minced garlic before adding the cream cheese. Once the cream cheese melted and the first cup of milk was in, I added broccoli florets then the parm. Once melted I added the second cup of milk, lots of fresh pepper, dash of freshly ground nutmeg and grilled chicken cut into slices WOW amazing dish!! I plan to try this with shrimp next week.
