Oven Baked Omelet with Feta and Tomatoes

This was delicious. The only changes I made were to use 1/2 whole eggs and 1/2 egg whites and the bread I used was rosemary olive oil bread. I think this could use a little more "stuff" in it so next time, I'll add some diced meat and maybe a little broccoli. I had this for dinner and really enjoyed it

Tasty Home Salad

I liked this. I didn't have a block of cheese, so I used shredded cheese and I used English cucumber so I didn't have to peel and seed it. I liked the addition of oregano and poultry seasoning. I used mixed baby greens instead of romaine

Simple Carnitas

Delicious.. Seasoning was spot on! I had this in a whole wheat tortilla with green chili salsa, queso and cabbage. I wish I could eat more, but I have to save the rest for meals the rest of the week, I'll be making this often, that's for sure

I enjoyed the flavors. I had mexican shredded cheese so I used that. It was a little dry with only 1 tsp of dijon so next time I'll add more mustard. I also only had dried dill so I used that

Sopapilla Cheesecake Dessert

Awesome.. Made this to take to a church potluck. I cut back a little on the butter and sugar and it was fine. I used light cream cheese and reduced fat crescent roll dough... delish!

Turkey Stir Fry with Lychees

Very tasty.. I agree with previous review. There was a lot of liquid that cooked out of the fruit so I added some cornstarch to thicken the sauce. I also used chicken as that was what I had in the freezer

Chinese Peppered Green Beans

These were very tasty. My first try of these long beans. I cooked them longer because they weren't even close to being cooked at the time in the recipe. I probably cooked somwhere in the range of 8-10 minutes and they still were nice and firm. The only seasonign I would suggest would be a pinch of salt. I was unable to find the green peppercorns - looked in 3 stores so I used lots of black pepper

Budget-Friendly Hearty Winter Soup

I just finished a big bowl of this and some beer bread and it was delicious. I used turkey smoked sasuage because that was in the freezer and browned it first. This recipe would be dellicious with almost any combo of veggies, but the ones in the recipe are good enough for me. I have leftovers and I am very happy!

Tasty. The cheese adds a bit of an unusual tang to the dish. I did think this was a bit dry though so next time I might add some teriyaki sauce to the finished wraps

Zucchini Creme Bars

I was really concerned when I poured the zucchini puree on top of the crust. It was almost as thin as water. I put it in the oven, carefully and it firmed up quite a bit. A couple of changes I think I'd make to the recipe next time - a little more flour in the filling. For me, the filling is still a bit too loose. I'd also reduce the sugar as it seems very sweet to me, The crust was delicious as it was,, Update - I stuck these back in the oven and baked them some more.. maybe another 30 minutes. The sugar turned more caramalized and the bars firmed up and browned. I like them MUCH better this way! So if you make these and don't like them, bake them more and you might be surprised

Oven Roasted Hominy

This was really tasty. I used olive oil instead of vegetable oil and used less garlic and chili powder and added salt. I stirred every 10 minutes and they were done at about 40 minutes. I had 2 or 3 kernals pop , but nothing bad. I'd say play with the seasonigns to suit your taste - and taste it before you roast it. If you don't like it before you roasted, you probably won't like it after. This does shrink down a LOT so I don't see how to get 6 servings out of this.. more like 2-3 :D

Caramel Butter Pecan Bars

I liked the cookie part, the nuts and the chocolate. The caramel part was way too sweet. What would be good would be to make this a salted caramel bar.. add some kosher salt when the caramel is poured on.. one of these times I'll try this

Love this stuff.. I usually make it with unsweetened almond milk. Sometimes I use sugar free vanilla pudding.. sometimes I've used cheesecake pudding. Both yummy. Rum extract or even real rum is also delicious in this

Jumbo Dark Chocolate Cookies

Delicious! The only thing preventing this from getting 4 stars is that there were not enough chips. I tossed in some cinnamon chips so this had a mexican chocolate taste. I also cut back on the salt to 1/2 t.
