Thanksgiving Flavored Turkey Burgers

Reviewed: Nov. 26, 2009
Really tasty. I used a cornbread stuffing mix and didn't use any butter to saute veggies. Added poultry seasoning and served this with some sauted broccoli slaw, along with the cream cheese and cranberry sauce. I'll make this again

Spicy Chipotle Turkey Burgers

Reviewed: Nov. 24, 2009
I am a wimp when it comes to heat, but I could not even taste the chipotle in this burger. I was hoping for some heat, but got nothing. I'll try this recipe again with 2 chipotles sometime and will adjust my review if it is better. With only one pepper, it was pretty bland

Arkansas Green Beans

Reviewed: Nov. 17, 2009
Pretty good. I used frozen haricort vert, brown sugar splenda and turkey bacon. I also used a little olive oil instead of the full amount of butter. I think adding onions to this would be good next time

Skillet Ham, Cabbage and Potatoes

Reviewed: Nov. 17, 2009
This was tasty, but without adding extra seasoning it would have been bland. I used a creole seasoning which had a little bite to it. I also added the potatoes way before I added the cabbage as raw potatoes take MUCH longer to cook that shredded cabbage. I used chicken sausage instead of ham and enjoyed this. it was comfort food

Savory Cheddar Zucchini Muffins

Reviewed: Nov. 15, 2009
I really liked these..they puffed up and got a really nice crown on them. I used turkey bacon, soy cheese, olive oil instead of butter (and half the amount). I did add a bit of chili powder as I was making these to serve with pumpkin chili. I made half a batch and popped them in the freezer. They reheated well.

Dill Pickle Meatloaf

Reviewed: Nov. 10, 2009
I really enjoyed this. I used panko crumbs instead of bread and added some chopped fresh spinach to the mix. Next time I think I'll add a bit of garlic. I used a mixture of lean ground pork and ground turkey as that was what I had in the freezer. This was very easy and I'll make it again sometime

Chorizo Chicken Roll

Reviewed: Nov. 9, 2009
I made this yesterday and it was yummy. I cut back on the fat I used soyrizo which is a soy based chorizo. I couldn't really taste the dill or the pinenuts so next time I'll leave them out and add some cheese. Since I cooked mine a little too long, they were a bit dry so I drizzled it with a little salsa verde to moisten it up

Pumpkin Sausage Lasagna

Reviewed: Oct. 20, 2009
I had this for dinner last night and enjoyed it. I used soy sausage and soy cheese, fat free ricotta and whole wheat/flaxseed noodles. I wasn't able to find the sauce so I added sauted onion and garlic. When I tasted the sauce, I felt it needed something more so I added a few dashes of red pepper flakes. Next time I make this, and there will be a next time, I'll bump up the seasonings more as after it sat in the fridge, the flavors mellowed. The pumpkin in this was really nice. It just made the dish taste richer, rather than like pumpkin. I also added chopped fresh spinach to get some more veggies in this!

Butternut Squash and Turkey Chili

Reviewed: Oct. 13, 2009
This was yummy. The only changes I made were to add in some shredded zucchini to bulk it up and to use black beans. I may have also added mor broth.. didn't measure that. This was a very mild chili to me, which is what I was looking for. If you are looking for soemthing with a bite, use hotter peppers and some more seasonings.

Cheesy Chicken Meatballs

Reviewed: Oct. 12, 2009
I had a little trouble with the cooking time. My thermometer never got to 165 so after 25-30 minutes I took them out. They were fully cooked and kind of dry. next time I make these, I'll take them out at 20 minutes, cut into one to check doneness and not rely on the thermometer. I tried 2 thermometers and both wouldn't get to 165, so I know one wasn't broken. I used ground turkey as that what was on sale here. I do think next time I'll add more seasonings

Amy's Cilantro Cream Sauce

Why why did I wait so long to make this? It's been in my recipe box forever and I finally took the plunge. I served this over grileld chicken breasts and it was divine! I used fat free ingredients and with all the seasonings, you cannot tell. YUM!

Colleen's Slow Cooker Jambalaya

Really tasty and easy. It is a bit more liquidy that the usual stuff, but not a soup. The only thing I'll do differnt next time is grill the sausage a bit before hand. I would have liked to see some grill marks on it.

Fried Cabbage Texas Style

Reviewed: Sep. 29, 2009
I really liked this one. I've had fried cabbage before but the cornbread mixture addition really changed this. I used turkey bacon and yes you do need to add some more fat to saute this. I added a bit of olive oil. It is pretty spicy, but not overly so.. yum

Tropical Turkey Meat Loaf

I really loved this! I made a few additions/changes. I used panko breadcrumbs, because I really like their crunch, added chopped fresh spinach and chopped red onion. I topped this with a mixture of ketchup, pineapple and a dash of soy sauce. This was soo good! I served with garlic green beans and really enjoyed my dinner!

Simple Sweet and Spicy Chicken Wraps

Reviewed: Sep. 10, 2009
Really good. I think next time I might try a different milder salsa or increase the honey as it was barely discernable. I used sauted broccoli slaw intead of spinach because I wanted to freeze these - which worked out well, by the way. I just popped them into my lunch bag with a small container of the sauce and nuked at lunch

Chili Chicken

Reviewed: Sep. 8, 2009
I made this using boneless breasts. I stuck them in a ziploc in the marinde over night and then grilled on a stovetop grill pan. I made a little bit of the marinde miusture to serve onth e side. Wow.. just delish. I had never used sweet thai chili sauce before and I really really like it. I havea huge bottle so I'll be thinking up other ways to use this up.. aside from making this dish again and again
