Barbecue Beef for Sandwiches

Oops! I pan-browned the meat on both sides in the Dutch oven. Then removed meat, cooked onions and garlic, and added remaining sauce ingredients. Then I put meat back in pot, brought to a simmer and then put in the oven for 2.5 hours. Took out, shredded meat and served. Excellent and easy! Thank you, Vicki!

Mozzarella Chicken

This was terrific! I even passed it on to some of my friends. Instead of pounding chicken breasts, I always slice chicken horizontally to make two thinner breasts, which makes double the number of roll-ups. I made my own seasoned breadcrumbs by adding oregano, pepper, parsley, garlic powder, and parmesan cheese. Definitely will be repeated in our household. My husband and boys loved it! Thanks, Amber!

Hot Onion Dip

Very simple, very quick and very adaptable. Thanks for a quick one. Everyone loved it. I served with the new soy crackers. Great! I read reviews and made with 2 pkg. cream cheese (1/3 less fat, by accident), 1 very lg. onion, 1/3 c. mayo and 1 c. Parmesan cheese (good ol' Kraft).

Beef Stew VI

This was a very good recipe. I used three cups water and boullion and one can of beef broth. I also added some thyme, about 1/4 cup brown sugar and peas. It turned out really well. Thanks. What a great way to use a cheap cut of meat!

Good Old Fashioned Pancakes

Great recipe. I took advice from other reviewers and cut back on baking powder (3 t.) and salt (1 t.). I also mix the melted butter into the dry ingredients until crumbs form, then add milk and eggs. Mixture is a little bit lumpy, but they are the perfect consistency! Thanks Grandma!

Caramel Brownies II

Got milk? These are similar to a recipe my mom used to make. She'd make them to give away, but we'd keep the edges. Somehow we didn't think we were eating as much if we ate only the edges. I swapped a Devil's food cake mix for the GC and I forgot to bake the first layer and did it all at once. Still great and even better the second day. I might try a little less butter next time b/c they seemed a little greasy, but, oh my, these are good!!

Apple-Raisin French Toast Casserole

Dust the top with powdered sugar and you've got a nice presentation too! For those of you who had problems with egg moisture, make sure you pack the bread in. Mine was so tight that it was puffed up when it came out of the oven. I also substituted 1 cup of heavy cream for 1 cup of the milk. It was delicious! Enjoy!

Baked Teriyaki Chicken

Great quick and easy dish! I used 1 1/2 tsp minced ginger (from the jar) and 3 cloves garlic. I browned boneless, skinless chicken thighs, removed from pan, made sauce and returned chicken to pan to bake. I turned the chicken 3 or 4 times while it baked. It was excellent over rice with sesame green beans on the side. This would probably be great if you added 1/4 to 1/2 tsp crushed red pepper flakes to give it a little spice. Will try it next time!

Excellent! Got rave reviews from my guests. I omitted ground cloves b/c I don't care for it. Added dash of nutmeg, ground allspice and some extra raisins as suggested by another reviewer. I bet they'd be good with some chocolate chips too! Oh yeah, I used all butter, no shortening.

Chewy Sugar Cookies

This was exactly what I was looking for! They were perfectly brown around the edges and soft and chewy in the middle. I could have eaten the whole batch if everyone else didn't chow on them! I froze a dozen balls and baked them a week later straight from the freezer into the oven. They were even better!! Great recipe! Will become one of my standbys!

Corn and Black Bean Salad

I used this recipe as the foundation and made a few changes due to what I had on hand. I used one can each of garbanzo beans, black beans and kidney beans (red, white and blue) in lieu of the corn and black beans recommended (I'm sure would be excellent too). I also had no fresh cilatro on hand, which would have enhanced the flavor further, and used dried. It was tasty, especially the second day! My 4-year old wanted to know if he could just have a spoonful of the dressing! Would be great addition to a BBQ!

Caramel Filled Chocolate Cookies

I lost my recipe for these great cookies and was so happy to find it here! These are favorites in our house. They are good right out of the oven AND several days later - if they last that long! They are surely worth the effort of making each ball. Try to make sure you seal the candy inside the cookie dough so as not to get "leaky" cookies! Enjoy!

Awesome Slow Cooker Pot Roast

I've never had much luck with pot roast... until now! This was so easy I didn't want to try it. Glad I did! I added some thyme, some fresh mushrooms I had on hand and a few bay leaves. Then I threw in some carrots about 15 minutes before serving. Husband and boys who "don't like pot roast" loved it and proclaimed it a "Make Again." Plenty of gravy, but I only used a 3 pound chuck roast. Probably would be spectacular if you added a cup of red wine in place of the water. Will try next time!
