To Die For Blueberry Muffins

These were great! The recipe made 5 giant muffins and we fought over them. I used frozen blueberries and they did sink to the bottom, buuuut we did not care. Next time we will use fresh blueberries and they will be even better! Texture is just right for a muffin...for a change.

Cornbread Casserole

Almost exactly what I was looking for. It was so good with chili. I put it under, my husband and son put it on top. Of course everyone who cooks makes some changes as they go along, but this recipe is adaptable and great without any alterations.

Downeast Maine Pumpkin Bread

De-licious. I love pumpkin bread IF it is the right recipe. This is it! I gave some of it away and took some of the leftovers to a friend's house. It got rave reviews. I wish I had kept more for us! I actually baked them in coffee cans and had round pieces. They made for beautiful presentation i.e. a flower with petals made from semi-circles and center sprinkled with confectioners' sugar. This will make it to the Thanksgiving table along with traditional apple pie.

Hot German Potato Salad III

I was a bit nervous serving this to my family - different for potato salad here. My son who does not like cold salads, loved it! I thought it was quite tasty too. I have a tendency to cook without tasting (smelling is a different story) and tweeking recipes even on the first time. Because I have never had this in any shape or form, I followed directions exactly as printed. Very good with rave reviews from the entire family. Will make again and again.

Tortellini Alfredo

This dish was excellent. It is quick, easy and, best of all, tasty. The first time I made it I skimped on the peas (only had a handful on hand) and had no mushrooms. I cannot wait to add the full amount of peas. My son missed it and ate it warmed the next day and pronounced it a "make-again!" Serve it with freshly grated Parm and a nice salad. Enjoy.

Red River Beef Stroganoff

Very good! I'm not usually one for "traditional suburban" dishes, but I had about 3 lbs. of cooked and sliced London broil to use. This turned out very well. Even though the meat was already cooked and I did not use the flour to brown the meat, the sauce was plenty thick enough. My husband and children enjoyed this. I will make it again, from the beginning next time!

Waffles I

Great waffle recipe. I made a 1 1/2 recipe and it worked great. Fluffy, not too oily, and crisp on the outside. Helpful hint: when adding more sugar than the recipe calls for (we like ours sweet), whisk eggs, whisk again with sugar until sugar is dissolved, then add remaining ingredients. It allows for the sugar to be incorporated so it doesn't cause the batter to stick to the waffle iron.

Chicken Enchiladas I

This was exactly what I wanted. I grilled and shredded the chicken; sauteed the onion and garlic before adding everything else. Used most of a 28-oz can of crushed tomatoes instead of tomato sauce and water and 1 can of green chilies in place of the green peppers and added a little bit of cumin for extra flavor. Instead of 6 oz cheese, used about 10 oz. Filled 10 large tortillas instead of 8. I guess it depends upon the size of your chicken breasts. Definitely to be made again.

Fabulous Homemade Bread

Excellent and kept very well. My neighbors loved it, as I thought I halved the recipe but the measurements remained the same in the text and I had to make all 6 loaves! I had to split it up in my mixer. Next time I'll be more careful!

Beth's Chocolate Chip Cookies

THE BEST!!! I have had many "issues" with chocolate chip cookies. This recipe is perfect! I made two batches in one week! I did alter b/c I do not have butter-flavored shortening - I used 1 cup butter and 1/3 cup regular shortening. I tried with the white and semi-sweet swirled chips (only a 10-oz. bag) plus mini Hershey's Special Dark bars in chunks to make up the difference. Good-bye Toll House recipe!!

Pork Chop and Potato Casserole

I'm not much of a casserole gal myself, but my family loved this. I browned the pork chops, then put the potatoes in the pan with a little bit of butter and browned them and pressed down on them before adding the pork and sauce. It made the potatoes a little brown and crispy on the bottom (not sure if this happens anyway or not). Very good recipe for a quick and easy meal.

Easy Sugar Cookies

Barbecue Beef for Sandwiches

Oops! I pan-browned the meat on both sides in the Dutch oven. Then removed meat, cooked onions and garlic, and added remaining sauce ingredients. Then I put meat back in pot, brought to a simmer and then put in the oven for 2.5 hours. Took out, shredded meat and served. Excellent and easy! Thank you, Vicki!

Mozzarella Chicken

This was terrific! I even passed it on to some of my friends. Instead of pounding chicken breasts, I always slice chicken horizontally to make two thinner breasts, which makes double the number of roll-ups. I made my own seasoned breadcrumbs by adding oregano, pepper, parsley, garlic powder, and parmesan cheese. Definitely will be repeated in our household. My husband and boys loved it! Thanks, Amber!

Hot Onion Dip

Very simple, very quick and very adaptable. Thanks for a quick one. Everyone loved it. I served with the new soy crackers. Great! I read reviews and made with 2 pkg. cream cheese (1/3 less fat, by accident), 1 very lg. onion, 1/3 c. mayo and 1 c. Parmesan cheese (good ol' Kraft).
