I'm all about embracing the changes in life! I'm a fairly newbie vegetarian...woke up one morning and decided no more meat and that was that. I'm leaning into vegan and am sure it will happen the same way. I'm a fairly new to being an empty nester. Hubby is a football coach, so during the season it's just me and dog in the nest. I'm a fairly new grandma...our adorable grandson will be 1 in October-09.
My favorite things to cook
Anything that uses produce from my garden. I've been a pepper-growing goddess this summer and have no idea how that happened! It was an unseasonably cool, rainy summer which shouldn't be great for producing peppers, but we eat them everyday: red, yellow, orange and green!
My favorite family cooking traditions
A nod to our Scandinavian roots...making lefse and coffee cakes at Christmas.
My cooking triumphs
Grilled Italian bruschettas topped with finely diced tomatoes, red onion, basil tossed with evoo and balsamic. mmmmmmmmmmmm. We eat this several nights a week during the summer.
My cooking tragedies
Chilled Carrot Soup...1997. My family still makes fun of me for it. Rightfully so.

Simple Whole Wheat Bread
I've made this bread almost every weekend since I tried this recipe...it's the best!! I've replaced up to half of the white flour with whole wheat and it's great.

Indian Dahl with Spinach
I was craving Indian food and made this recipe. It was awesome with a little rice and a cup of Chai (I found a concentrate in the ethnic food aisle - just heat with milk)! I'm taking half of the leftovers for lunch tomorrow and freezing the other half.
