Mexican Rice II
Perfect rice. Just like my mom used to make. The trick is to not stir or even lift the lid while in simmering stage. Tastes just like the rice in a mexican restaurant.

Upside Down Pumpkin Cake
Great dessert recipe. Is it a cake, is it a pumpkin pie? Who knows, but everyone who tried it at a Church potluck loved it and asked for the recipe. Yummmmmm!!!

Oatmeal Pudding Cookies
This recipe was just okay, sorry! But they didn't flatten out at all. I feel that the amount of rolled oats was way too much. The recipe on the insert of the Crisco package is much better than this. Maybe I'll try the Crisco recipe and add the pudding.
