Smothered Filet Mignon

I made this for dinner last night. After a few bites, my boyfriend muted the TV and said to me, "Baby, this is outstanding. It's so tender. It tastes just like the ones in the restaurant. How did you do that?" After eating his, he finished mine. I used 1-inch filets and left them out to marinate. I pierced each sides with a fork a few times to help the flavors soak in. I then broiled them 3-4 inches from the heat source, 7 minutes per side. I put the topping on during the last 2 minutes. Served them sliced over a romaine salad with sliced red onions, pine nuts, croutons, and blue cheese with balsamic dressing. Also added the grilled shrimp scampi from this site. Mmmm.

Chicken Satay

Just made these for my Super Bowl party. Marinated them for about 15 hours then cooked on a stovetop grill. Made the Thai-Style Peanut Sauce with Honey for a great combination. Very tasty and flavorful even without the sauce.

Savory Garlic Marinated Steaks

I rate my dishes not just by my own taste but by the reactions of those I cook for. I made four servings (2 1-inch rib eyes about 0.8 lb each) last night so that my boyfriend and I would have leftovers for lunch. As we ate, I saw him eyeing my plate. As soon as he finished his, he reached over, grabbed the half I left for lunch, and finished that too. Lunch, dinner gone. How I prepared it: marinated overnight, no cayenne or liquid smoke, broiled for 5 minutes each side for medium. A definite keeper - the steak and the bf! :)

Pork Chops Stuffed with Smoked Gouda and Bacon

I just made this last night for my boyfriend, and he loved it. At the end of the meal, he said, "That was really good. It was freakin' delicious. Are you going to finish that?" and finished the last morsel on my plate. It will become part of our rotation. To make it more low-fat, I used turkey bacon. Since I don't have a grill, I pan seared it over high heat in the pan with the bacon grease to give it some color. I then broiled it about 3 inches from the flame for about 4 minutes per side. The market didn't have the 2 1/4 inch chops I used 1 inch boneless loins. Also, I didn't have toothpicks, and it was fine. Having the filling ooze out of the chops was a nice visual when I served them. These were served with brown rice and a spring mix salad with pine nuts and balsamic vinagrette. Yummy!

Honey Ginger Shrimp

I first made this for my boyfriend in November. He has since asked for "that shrimp dish that I like" multiple times. I have added more honey and cut down on the pepper because it is way too spicy. When I mix the pepper with the ginger in the pan, my eyes water and my boyfriend starts sneezing. It's a strange thing, but the dish is really delicious.

Rosemary Roasted Turkey

This is the first recipe I've rated. I just wanted to say how great it iturned out. It was my first turkey. The color was beautiful and the taste was savory. We brined it overnight first and followed the recipe. We also turned the turkey over toward the end of the cooking time. The gravy was also really good. We just mixed soy sauce, oyster sauce, and cornstarch with the turkey drippings (after getting rid of excess oil). Yummy!
