Shrimp and Quinoa
The quinoa with all the veggies and sweet lime flavoring is excellent. I used red peppers instead of green for extra color, and regular raisins because I didn't have the golden. The only thing I didn't like was the shrimp had no flavor. I would grill it separately speared on rosemary kebobs and your favorite seasonings.

Coconut Macaroons III
I made this & meringue cookies for my hubby's birthday. I normally don't like coconut macaroons, but these were pretty good. My package of coconut flakes only came with 4 1/2 cups, so I added 1 cup mini semisweet chocolate chips. I think that actually helped keep it from being too sweet. After the first batch, I decided not to use my hands (hate the sticky mess). I used two spoons to make loose balls. I dipped my fingers in cold water (to keep them from sticking) & lightly patted the balls. My husband loved the cookies, and I have to admit they're a little dangerous for me, too!

Beth's Spicy Oatmeal Raisin Cookies
I normally don't like to eat the cookies I bake. These were addictive! I ate 6 in one sitting! For the holidays, I used Cranraisins instead of raisins. Yum!
