About this Cook
Transitioning into cooking for two again after 30 years... trying new recipes, new ways to cook. Finally got a new kitchen that I've needed for many years and enjoy being it more than going out to eat. I always loved to entertain, but the stress of it was sometimes overwhelming because I thought I had to wow my guests with intricate meals...now I wow them (and myself) with simpler, yet delicious meals.
My favorite things to cook
I'm very good at whipping up a meal at a moments notice. Looking at what I have for ingredients and creating something easily allows me to enjoy drop in company as well as not frequenting fast food establishments because I don't know what to cook. I love to create salads, anything chocolate, new as well as tried & true chicken recipes, anything on the grill, homemade pizza's, soups & chowders.
My favorite family cooking traditions
Sour Cream Coffee Cake and overnight french toast for holiday breakfasts. Last minute...no idea what to make for dessert...simple yet decadent chocolate float dessert I've been making for almost 30 yrs. Making up recipes with what I have and having my family tell me...please write this one down!
My cooking triumphs
Recreated my favorite Uno's meal by looking up the ingredients online and creating my own version. After defrosting fish and not scallops for this years Christmas brunch, I quickly reviewed a few recipes at allrecipes and created my version of a wonderful fish & shrimp chowder and no one even missed the scallops!
My cooking tragedies
Overcooked my first try at roasted veggies...dried up into nothing & burned! Spent an hour making meatballs that I ended up burning in my slow cooker. Finding out 3 hours before company was to arrive on Easter Sunday that my crown roast was bad! This is when I learned that all was not lost, there's always chicken!

Hot Fudge Sauce I
Just made this to put over an ice cream pie....won't be doing that tonight! Too soupy...maybe it will thicken up overnight in the refrigerator. I followed recipe exactly...next time I will reduce the sugar. Too sweet for my taste. Mine did not come out grainy at all. The last recipe I made (different recipe) was very grainy. This onoe I did over double boiler and gradualy added sugar and I believe that made the difference. Very smooth and rich. Looks like it will be good over an angel cake. Not sure about the ice cream pie!

Bacon Cheese Frittata
Why anyone would make quiche anymore is beyond me! No fattening, soggy crust and easy still doesn't describe this frittata! New Years Day brunch made easy....overnight french toast, a bacon and scallion frittata, a tomato, mushroom and leek frittata, spiral ham, sour cream coffee cake and easy company potatoes! Yum!

Rosemary Zucchini Sticks
I have made these two times now to rave reviews!!! So easy to make it ahead of time to have ready or bring it to a party (both times I brought to a barbecue) pop it in the oven when you get there and they're piping hot. I used both marinara sauce and horseradish sauce...yum! I took someone's advice and dipped them first in flour, then egg, then bread crumbs with tons of fresh rosemary. I may try string cheese next as everyone thought they were mozzarella sticks...love recipes that keep the fat down by baking.
