Cream Cheese Penguins
I would give these 5 stars or even 10 for presentation but 1 minus in taste. These are absolutely adorable and every one loves looking at them but not eating them. I tried the Onion/Chives cream cheese and even added a bit of garlic salt but still very bland. A pain to make but if your goal is to bring smiles to people faces then this is for you

Manicotti Alla Romana
Instead of the bouillon I used a mix of cream of chicken and half and half to make a sauce and adjusted the salt to my liking. Added some fennel seeds to the ground beef for sausage flavor as I didn't have sausage and also added previously sauteed and pureed, green peppers, onion, garlic, oregano and a bit of tomato sauce to the beef.

Don Struble's Puerto Rican Pork Roast
This is absolutely Puerto Rican. I am not sure why doing a variation with the Worcestershire instead of the vinegar etc would make it less authentic, but this is what we know as Carne Mechada but this one is made with Pork. It should have been a boneless pork roast but you can do the same with Beef. This is a Pork Roast too not to be confused with the so called Pernil Asado. Some people put pepperonis,some ham etc. This is why there are recipes. Everyone would make them a bit different. I marinade the meat with oregano, olive oil etc, and then stuff it. Really good and flavorful.
