About this Cook
Married about 10 years and we enjoy dining out but will cook at home if I have the time and desire.
My favorite things to cook
Chicken Parm & Spanish style chicken & yellow rice with a lemon hot sauce flair. Salmon too. My husband loves my cooking.
My favorite family cooking traditions
None, my mother didn't really have time with 5 kids to teach us anything in the kitchen. But she makes a very good jello mold with nuts and cream cheese at the holidays.
My cooking triumphs
8 cheese lasagna. A lot of work though.
My cooking tragedies
I always make hamburgers on the stove too overdone and they have no flavor. I prefer burgers out at a restaurant or on the grill.

Green Beans with Blue Cheese
Made these for Christmas and they were a hit. Very easy to prepare. I used the pre-cooked bacon in the pouches that you can find by the salad dressing mixes and bacon bits. It was real bacon and instead of the bacon fat I used olive oil and it worked out just fine and was very tasty. Nice change to ordinary green beans. Thank you!

It's Chili by George!!
I followed this recipe exactly for the most part except only used 3/4 can of the beans for each and added 2 1/2 lbs of ground round beef because we are not huge bean fans. This is a very good basic chili recipe. My husband doesn't like it spicy, but I do so this was just right for both of us as it wasn't too spicy nor too bland. I only wish George had told me if I should cover the pot while simmering or leave the lid off. I left it off cause I wasn't sure. Other reviews were correct in saying the chili at first looked too thin, but it does thicken up nicely after cooking for the full 90 minutes. I made it for Superbowl Sunday and it's a keeper!

Wonderful Meatloaf
This was very good. I didn't have a loaf pan so I combined the ingredients and shaped this into a loaf and baked it in a pyrex dish. I don't recommend doing this because the loaf spreads and doesn't retain the loaf form very well. I will use the loaf pan (as recommended) the next time I make this. It will be the first dish I think of when I have left over white rice on hand as it is perfect for using leftover rice with. Also, this would be a good recipe for people who like to stuff green peppers. We enjoyed the sweet taste this meatloaf offered it was not overwhelming. But like other reviewers have noted it needs salt and pepper for sure! Very easy to prepare especially if rice is already made.
