I work full time, and 'mom' full time, so I'm always looking for kid-pleasing, husband-pleasing, and most of all, quick and easy recipes (mom pleasing!).
My favorite things to cook
I just love to cook! I do pastas and chicken the most, but I'm always looking to try new things. Right now I'm looking for some good fish recipes to add to my regular rotation. Which really isn't regular at all, because I'm always trying new recipes...
My favorite family cooking traditions
Wish I had some...right now, my ONLY family cooking tradition is just getting dinner on the table at a reasonable hour every night!
My cooking triumphs
I'd have to say my biggest cooking triumph to date is the ham I cooked yesterday (Easter 2006) using Colleen's recipe for honey glazed ham. It was my first attempt at baking a ham, and it turned out FABULOUS!
My cooking tragedies
No major tragedies, just small errors is judgement, and things like getting caught up in laundry or breaking up a kid argument, and forgetting I needed to take something out of the oven or off the stove...

Blackened Chicken
Tried this tonight, it was FANTASTIC! A little spicy for my 7 year old, but everyone else loved it. I doubled it and used thin cut chicken breasts...don't have a cast iron skillet, so I just got a regular nonstick pan super hot, fried four of them together for a minute on each side, then put them on the cookie sheet in the oven for ten minutes. When I pulled them out of the oven to check them for doneness, they were like BUTTER :) Served them sliced on a simple salad with fat free ranch dressing....soooo good!

Ratatouille Bake
Made this last night...unfortunately, the eggplant I bought earlier in the week didn't make it, but I used all he oher veggies and a can of fire-roasted tomatoes, kept everything else the same. It was great, we all loved it! Thanks for the recipe!

Chocolate Chip Pancakes
My 15 year old son found this recipe and made it for my Mother's Day breakfast, including the cinnamon honey butter syrup. They were FANTASTIC, including the cinnamon honey butter...but just a little drizzle works, and I'm sure they would have been almost as good without it, but what a great special occasion breakfast it made!
