Chicken and Gnocchi Soup

I am eating this soup as I type. It is FRiggin AMAZING!!!!!!!!!! I love this recipe. It is thick and rick and yummy. I used fat free half and half. This will be in my regular rotation for sure. Even my husband loved it.

Cheap Chocolate Cake

Fool proof. It is my sisters favorite birthday cake. No need for cake mix when you have this recipe. Great for cupcakes too. No eggs make it allergy friendly.

Spinach stuffed turkey meatloaf

Pork Enchiladas

I didn't have leftover portk. I used a pork tenderloin which I cooked in the morning in a slow cooker. Perfect consistancy. I made a double batch of enchiladas. one batch I used green enchiladas sauce on top instead of the tomato soup mixture. I liked that much better. I would omit the tomato soup mixture all together. It made the bottom of the enchiladas too mushy. and use Green enchilada sauce on top instead. Otherwise it was good.

Perfect. Both my guests asked for the recipe. I was able to make a homemade marinade with things I had on hand. And I could doctor it by adding a little more or less of spice.

Cool Cucumber Salsa

Very good. I used with grilled chicken and wrapped in a tortilla. Perfect. However, the juice left it not so crisp the next day. I used dried herbs instead of fresh to cut down cost and used what was on hand.

Grandma's Meat Sauce

This was my first attempt at sauce and I loved it. I did add some mushrooms, green pepper, red pepper. And I used ground turkey instead of beef and turkey sausage instead of pork.

Aunt Eileen's Stuffed Eggplant

This came out delicious. We omitted the garlic for preference. The ingredients can be costly but It would be easy enough to substitute cheddar cheese and omit the capers. We also used greek olives instead of black. This recipe made 2 large eggplant. I bet the small ones would be great too for individual servings.

Wedding Cake Icing

This is a great basic white frosting recipe. It holds up well without refridgeration. It is also good for dairy/egg free allergies and vegetarians. I usually half the recipe for one batch of cupcakes or 9X13 cake.

Zesty Slow Cooker Chicken Barbecue

This is very easy to prep and the ingredients are simple. I made it the day ahead and packed it for work lunches. I easily altered the recipe when I was out of Italian dresing by adding a little oil and vinegar with spices. A keeper for sure!!
