I am a nurse.I work on a transplant unit in a Boston hospital. I am married with two kids.
My favorite things to cook
I love to cook for all occasions. Everyone knows when I come I bring food. Or expect to eat when you are on my turf. I love to bake all kinds of things. Cookies are a family favorite for sure. But I love to make a good meal. Something quick and fairly easy, but good for company and good for left overs. I am sure my cooking is what won my husband over!
My favorite family cooking traditions
I enjoy making cookies with my nieces. I learned to cook from watching my mother. So I hope I can help to teach someone else.I am lucky to have my mother and aunt who are excellent cooks and I can learn from them.

Chicken and Gnocchi Soup
I am eating this soup as I type. It is FRiggin AMAZING!!!!!!!!!! I love this recipe. It is thick and rick and yummy. I used fat free half and half. This will be in my regular rotation for sure. Even my husband loved it.

Pork Enchiladas
I didn't have leftover portk. I used a pork tenderloin which I cooked in the morning in a slow cooker. Perfect consistancy. I made a double batch of enchiladas. one batch I used green enchiladas sauce on top instead of the tomato soup mixture. I liked that much better. I would omit the tomato soup mixture all together. It made the bottom of the enchiladas too mushy. and use Green enchilada sauce on top instead. Otherwise it was good.

Banana Muffins II
REally easy and moist and fast and tasty and inexpensive. I did add choc chips which was great.
