Peach Muffins

Great muffins! Light and moist, with great peach flavor. Like other reviewers I did make some changes - 1 c applesauce for 1 c of oil, 1 c brown sugar for 1 c of the granulated, and added 1 tsp vanilla. The batter was the perfect consistency after adding the peaches. I filled the cups 2/3 full and sprinkled raw sugar on top before baking. My yield was 22 muffins.

Easy Key Lime Pie I

Great! This is a perfect key lime pie. I think if I had used 2 cans of condensed milk like other reviewers suggested I would have had to use a deep dish pie pan. *Update - this has become a common dessert at our house and always comes out perfectly. It's so easy to make and a great summertime dessert!

Eggplant Parmesan II

Good recipe, I'll definitely try it again. I think my slices were too thick because it didn't get as crispy as I would have liked. And I cooked it for longer than the recipe calls for. The flavor was great though.

Easy Rum Cake

Love this! I've made it both with and without the rum and it's so good! Not quite as dense as a poundcake and really moist. Came out great in a 9x13 and also as cupcakes. If you do cupcakes, fill a little less than halfway so it doesn't bake up beyond the edge. Then the glaze will soak in and not run over. Some of my cupcakes were too high so I used a turkey baster with an injector tip to get glaze into the middle.

Cream Cheese Frosting II

Yum! Easily the best cream cheese frosting I've ever tasted. Following others' advice I halved the cream cheese, added an extra 1/2 cup powdered sugar and doubled the vanilla. Makes enough to thickly cover a 2-layer cake.

Strawberry Glazed Pie

So good! I used this as a filling for a layer cake with the Cream Cheese Frosting II recipe. The leftover glaze was awesome over ice cream. Will definitely make this again.

Mushroom Slow Cooker Roast Beef

Cherry Sauce for Ham

This was an easy, sweet sauce. We ate it with pork chops that were cooked with garlic, salt and pepper. When the chops were mostly done, I made the cherry sauce in the same pan and then simmered everything together until they were cooked through. I used spicy brown mustard and increased the amount to a heaping tablespoon.

Strawberry and Feta Salad

Love this dressing! I've been making big batches to use on all my salads. Sometimes I'll use a different vinegar or other spices (onion, garlic, thyme, oregano, etc) so switch it up a little.

Quick and Easy Sauteed Spinach

Soft Onion Sandwich Rolls

I have made these rolls many times - both with the milk/water mix and without milk (just water). So easy and they always come out perfect. They're also great with garlic instead of onion, or plain. My husband likes them for sandwiches but my favorite is warmed with butter and honey.

Pretty Chicken Marinade

I used this to marinate chicken breasts for about 7 hours before grilling. They were so juicy and tasted great! I cut down the soy sauce just a little and thought it was perfect. Will definitely use this again.

Bourbon Whiskey BBQ Sauce

The only change I made was omitting the whiskey, and it still came out great. I used an immersion blender at the end because I like a smooth sauce. Great consistency and taste.

Italian Bread Using a Bread Machine

I've made this recipe 4 times on both dry and humid days. It tastes great, but always comes out a little too dense. Even small breadsticks come out dense. I really like the taste though, so I'll try to tweak the recipe to get a lighter dough.

Whole Wheat Honey Bread

Love this recipe! So easy, and tastes great. I use half wheat flour and half all-purpose. We like to use it for sandwich bread so I use the dough setting on my bread machine then bake in a bread pan to get that nice sandwich shape.

Baked Pineapple
