Lemon Poppy Seed Muffins I
Loved this! I didn't have lemon-flavored yogurt so I used plain and added 1 tsp lemon extract. And I accidentally put the 1/3 c lemon juice into my mix - but everyone loved it. The lemon flavor wasn't at all overpowering. The batter seemed really dry so I was careful not to overmix. They came out nice and moist though.

Overnight French Toast
This was so good! I only had fresh soft Italian bread and it still came out great. I did add a little cinnamon to it and served it with powdered sugar and pancake syrup. Next time I'll be sure to use thicker bread that is a little stale.

Peach Muffins
Great muffins! Light and moist, with great peach flavor. Like other reviewers I did make some changes - 1 c applesauce for 1 c of oil, 1 c brown sugar for 1 c of the granulated, and added 1 tsp vanilla. The batter was the perfect consistency after adding the peaches. I filled the cups 2/3 full and sprinkled raw sugar on top before baking. My yield was 22 muffins.
