Happy New Year!!! Just finished off our mimosas. It's a tradition for Christmas breakfasts, New Year's brunches and our favourite Dominican resorts serves them up each morning while we're on vacation!

Wiener Schnitzel

So easy to prepare and sooooooo tasty! A dollop or "glop" of sour cream and a side of potato pancakes makes this a treat during the cold winter months.

Pasta with Pesto and Scallops

Fabulous! Fresh scallops, homemade fettucini and homemade pesto made this a truly remarkable meal! Extra wine, a little more lemon juice and diced red bell pepper (for colour) were the only changes. We made enough so that there were leftovers for another meal for my wife and I. We'll definitely do this one again!

Mediterranean Pasta

Fabulous! My wife and I prepared the dish for Valentines Day. It's a keeper and definitely one we'll use again. We added a tbsp. of minced garlic, and substituted crushed tomatoes instead of regular canned tomatoes. As usual, I made extra so that I had a couple of "extras" for my lunch. It freezes really well, and tasted great when "nuked" the following week.
