This is missing some very important steps to be Altantic Corn Chowder. The creamed corn is right, and Evaporated milk, just need to add more of both, everyone is different so play with it but the biggest trick is, cover the diced potatoes in just enough salted water to cover them, cook untit done. Then stir in canned milk, creamed corn. (add extra if you like the more the better!) Then in the mircowave or pot cook the onion in the butter, then stir the melted butter and onions on top. S&P to taste. Funny how just changing the way it is done makes all the difference. I sometimes add a bayleaf or other seasonings, as well as carrot, peas etc to mix it up. if you like it thick, use a rue! But it is really the can milk, creamed corn, with the melted butter and onions that makes it soooo good.

I have made this at least 6 times and it always turns out...NOTE if you are getting cracks you need to make sure you grease the sides of the pan so it will not stick. The only time I had a crack was when I forgot to grease the sides. Also works great as a Marble Cheesecake....take out one cup of filling and mix with 1 block of melted unsweetened chocolate. Makes for a great switch up and still turns out amazing!

Always a hit! More like a cake like then a regular cookie, but that doesnt matter, I love the flavor and the nice moist cookie!
