Broccoli and Sausage Cavatelli

Yum. Easy, simple, yet loaded with taste. I used farfalle, and 1/2 spicy, 1/2 sweet Italian Sausage, added 2 Tbsp of butter, and used steamed broccoli from the bag. Tasty and delicious!

Homemade Mac and Cheese

This was good considering I wanted a recipe that did NOT have velveeta or cream. However, I also found it a little bland. (Probably for that reason) If I'm going to go through the effort of making a mac&chz, I'm going to stick with the 4chz macaroni from this site or ina garden's macaroni recipe on the Food Network (w/ gruyere and cheddar.... OMG!). I'll stick with the blue box for quick and easy. Thanks, though!

Best Ever Jalapeno Poppers

These are time consuming to make - but a fantastic addition to a Super Bowl Party or similar type event where finger foods are necessities. My cheese ended up being a blend of Colby/Mont Jack, and it was fine. I baked at 350 for 30 min (until bubbly) like others, and no one missed it being deep fried.

Cocktail Meatballs

Husband cannot get ENOUGH! I used frozen meatballs, but made the sauce - which is incredible. You will need 2x the sauce, but its worth it. I just threw it all in the crock pot and let it go for a few hours... yummmmm.

My Crab Cakes

I followed Lucky/Sami review practically to the T and my dinner guests were blown away! I did add a pinch of wasabi powder to the aoili and my husband almost licked his plate. I also made these into smaller cakes, so people could use their fingers to eat.. everyone was very impressed how "crabby and not too cake-like" these were.

Campfire Skillet Breakfast

I love this recipe, but make it over the stove. It is my "go-to" breakfast when I'm in charge Sunday mornings and need to use up some left over potatoes. Quick, easy, tasty!

Very tasty. Subsituted mozzarella for swiss and left out the cottage cheese becuase we're not fans. Husband said nice suprise from the usual.

Chicken and Sausage with Bowties

Terrific! Used chicken and hot italian sausage. Fresh garlic, 1 can diced tomatoes, not drained. (Cooking for 2). Used some cabernet (a nice excuse to enjoy a glass of wine since the bottle is open.) Husband loved, but said to leave out the chicken next time, becuase the sausage was so good and the chicken got lost in the flavor. Will use a mix of hot/sweet italian sausage next time and maybe add some onions to the mix. Very good!!!

Super Al's Cocktail Sauce

Fantastic recipe. Sometimes I kick it up a little by adding a tbs of tequila like the tequila cocktail sauce recipe from this site as well. Depends if I have some in the house and who my crowd is.

BBQ Glazed Homemade Meatballs

Great. I made exactly as is (half the brown sugar in the glaze), and served with steamed veggies and mashed potatoes. The next day we made sub sandwiches with the leftovers. I liked the texture of the meatball.

The Best Sweet and Sour Meatballs

This was tasty. I like that there is no ketchup, because I don't like that tangy sweet taste. I made them over mashed potatoes, and husband ate it up. He still prefers the sauce from the cocktail meatball recipe. Nice alternative to regular meatballs and tomato sauce.

Beth's Spicy Oatmeal Raisin Cookies

Yummmmmmm! I halved the recipe b/c I was testing it, used all butter (no shortening in the house), used rather generous tablespoon size drops of the batter (didn't want to dirty more trays), and baked 10 minutes. These are fantastic! I may even use more raisins/cinnamon next time - but its a personal preference - the recipe is not lacking for anything.

Braised Balsamic Chicken

Love love love!! Cut chicken into bite-size pieces, doubled the sauce (added about 1/4 jar of leftover marina sauce from the fridge - had to get rid of it), and put it over angel hair pasta. It almost tastes like a really exotic tomato sauce. We're balsamic lovers in my house, so the ratio seemed fine!

Chicken Pot Pie IX

How can something so simple be so good?!?! I used Pillsbury ready to bake pie crust. Egg-washed the bottom and baked 5 minutes. Topped w/ my mixture of cubed chicken breast, peas, corn, celery, and 2 small chopped diced russet potatoes that had been boiling. I followed the exact recipe for the sauce, only adding some oregano and rosemary, and baked 40 mins at 375. BEAUTIFUL!!!! Totally comforting home-made cold-weather type food. Husband went nuts. Tip - if your sauce is too "runny" and you still need to thicken it... you are not cooking your roux long enough. Make sure you combine that flour and butter and let it bubble for a good two to four minutes. That will ensure your sauce thickens up beautifully!

Basic Beurre Blanc

I am a huge beurre blanc fan. This did not taste like it should. I followed the recipe exactly, but I think I should have followed others reviews and halved the butter. Too much butter, too watery, never really thickened. I may combine it with other recipes to try to perfect.

Blackened Tuna Steaks with Mango Salsa

Wow. What a healthy alternative. I used store-bought mango salso from a fabulous grocery store called Stew Leonards here in the CT/NY area. My husbands hates Mango, so I made a buerre blanc sauce for him to dip into instead, and that countered the spicy seasoning very well. I only marinated for about 1 hr, and used slightly less cayenne pepper. I sprinkled generously, and followed recipe exactly. Warning - will cause a little smoke in the kitchen... open a window. Otherwise, a divine recipe! Will make every time tuna steaks go on sale!
