Refried Beans Without the Refry
This has got to be the smartest refried bean recipe ever! I make this to go with chicken enchiladas and end up with enough leftovers to use for tacos later.

Jacob's Coat Casserole
Wow! Was that ever good! I used 16oz of frozen mixed veggies and grated cheddar cheese (saving a handful to put on the potatoes for visual appeal) and it came out great! This is a great alternative for those who are not huge fans of the condensed soup version. I added some spices for extra flavor and it was fantastic!! Thanks!

Pecan Pie Bars I
I've made these for every holiday gathering two years running and they are a HUGE hit!! A great substitute for traditional pecan pie and a perfect make-ahead recipe! Thank you Marietta!!!
