Authentic Mexican Breakfast Tacos
Excellent. So good I had it 3 or 4 times in one week. Even better to saute peppers and onions before adding the eggs. Also made once with colby jack cheese and it was great too. Good with or without hot sauce. I recommend making sure you use corn tortillas, not flour, as the texture and flavor make this dish better.

Spicy Vegetarian Lasagna
Very good but missing something. The name is a bit misleading as I did not think it was spicy at all, and really the only vegetable besides the onion is bell pepper. A more accurate name would be "Four Pepper Lasagna." Next time I make this, I'm going to add more onions and more spices to the sauce such as salt, pepper, oregano, and basil, as well as more red pepper flakes than what the recipe states, and/or Italian seasoned diced tomatoes. I was also surprised that the recipe didn't call for garlic so next time I'll add a couple cloves. I think these changes will give it the depth of flavor that it needs.

Broccoli and Cauliflower Casserole
Good, but had to modify. Thought butter amount was ridiculous so used no more than 1 Tbsp. to saute onion (also added 2 cloves of minced garlic). Changed order of recipe by then adding milk, soup, and about 1/2 cup shredded cheddar (not a pound of Velveeta!) to make a sauce THEN stirred in the broccoli, cauliflower, and rice. All fit into an 8x8 glass dish. Sprinkled top with freshly ground pepper, Italian bread crumbs instead of crackers, and a little more cheddar. Would be good with ham on side or even in the casserole.
