Fabulous Fruit Salad

Very good. Teenager approved. Definately use the lemon yogurt, Yoplait makes a great version if you're having trouble finding it.

Hot Buttered Rum Batter

It was a huge hit served hot in cider for our Thanksgiving family "reunion". I cut the recipe in half and stored half in the freezer in "Ball" freezer-friendly containers.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

This salad is very good (addictive, in fact) with the following changes (some to decrease the amount of sugar): use walnut oil in place of one of the oils, use mandarin oranges instead of navel oranges, no added sugar, less OJ, regular walnut pieces, and bagged spring mix to make it snappy!

Baked Ziti I

This was a real hit at my house - and that includes a lot of PICKY eaters. I used RAGU with sauted onions/garlic at the advice of a friend that makes this and it turned out great. The only feedback was that it needed more "stuff" in the middle (sour cream) and more cheese...can you ever REALLY get too much cheese??? I think not!

Quick and Easy Alfredo Sauce

This is an excellent alfredo recipe that the kids loved too! I added about a tsp of lemon juice (instead of lemon pepper), fresh ground pepper, kosher salt, and a bay leaf. I tossed in a handful of fresh parmesan cheese at the end. I used regular version of the cream cheese, but will try the light version next time to try to minimize the fat content.

Black Bean And Corn Salad II

You won't be disappointed with this recipe! Wow! I left out the red pepper because of personal taste, but kept everything else. I took the spice advice and added cumin and oregano, and also doubled (at least) the salt, fresh garlic, and cayenne pepper. It gave it a very tasty kick!

Chicken Cordon Bleu II

This is absolutely delicious! As with all recipes, I made a few changes: 1- I decreased the butter to 4 Tbsp. 2- Left it in the skillet only long enough to brown the outside of the rolled chicken. Then, I baked it the remaining time on 350 degrees just until the chicken was cooked through. 3- I only used 3/4 cup of whipping cream and thickened the sauce. We loved it, definitely a make-again recipe!

Baked Fish Creole

This was delicious! I tried it on a fluke because I had fish that I needed to use, and I am so glad that I did! This is a regular favorite at my house now. You could use less rice and don’t be surprised if you need to bake it longer. Also, I don't usually keep chili sauce on hand, so I made my own with tomato puree, chili powder, cumin, and a small amount of vegetable oil. Add Creole seasoning for extra flavor! Enjoy!
