Easy Garlic and Rosemary Chicken

Simple and delicious. I cut back on the rosemary to about 1 T. I squeezed 1 whole lemon over the chicken to help prevent it from drying out in the oven. The dish came out flavorful and was very EASY to make. Next time I will try making this with fresh rosemary as some others have suggested.

Mexican Chicken I

Great tasting recipe that can easily be scaled down for a 2 person meal. I took the advice of others and only cooked this dish for 1 hour at 350. Will definitely make this dish again.

The nutmeg was very overpowering in this dish. IF I decide to make this again, I will definitely cut the nutmeg in half. I wasn't impressed with this recipe and neither was my husband.

Cottage Meatloaf

This was a little too moist for my personal taste. I substituted worcestshire sauce for the tomato juice as others suggested and I'm glad I did. The mustard was a bit too strong for my own personal tastes as well, so I will cut back on it next time. Overall, this is a good base recipe for meatloaf. I just need to make a few tweaks for my tastebuds.

Chicken Enchiladas

This is a great base recipe. I made it exactly as stated and thought it had great flavor, but too dry. I will make again but will double the cheese and enchilada sauce, using 1 can of enchilada sauce in the chicken mixture, and the other can on top of the enchiladas.

Kiki's Borracho (Drunken) Beans

Since I didn't prepare for this meal ahead of time, I put the dried beans into a large pot and covered them with water about an inch above the beans. I brought the pot to a boil and then covered the pot and removed it from the burner. After an hour or so, I drained the water and then began following the recipe. I only had Miller Lite on hand so I used that. I was concerned that it wouldn't taste right because it gave off a weird odor with the oregano, but it was fine. I added extra jalapenos to the pot since we like our food spicy. This was absolutely delicious and worth the time put in. This is a definite keeper!

Sloppy Joes II

This is a great Sloppy Joe recipe. Much better than using the canned stuff. I had to add an additional 1/4 cup ketchup and a dash of extra garlic powder to the meat. Before adding the additional ketchup, the meat looked like it would be too dry. The end result was very tasty!

PHILLY Bacon and Tomato Presto Pasta

This is a simple & tasty recipe. I used Chive & Onion Light cream cheese since that was all I could find in my local grocery store. While this is best to eat fresh off the stovetop, it does reheat well the next day for lunch. You can make this even faster by heating up precooked bacon.

Jalapeno Popper Spread

I made this for my husband's poker party and all of the men ate it up! I added panko bread crumbs per other's suggestions and I can't imagine making this without them. I served it with Tostitos scoops and it was a real hit!

Honey Glazed Pork Tenderloin

I kept the sauce measurements the same as stated, but only used one 1 lb tenderloin as there are only 2 of us eating. I had to sub olive oil for the sesame oil since I don't keep sesame oil on hand. This was tasty and simple.

Chicken Scampi II

WOW! This was SO good. I added green, red, and yellow bell pepper strips to the chicken for more color and it turned out wonderful! This is a keeper! This is truly as good as something you would order in a restaurant.

Slow Cooker Dump and Go Cheesy Chicken

I made this with all of the ingredients listed in the posting. The only change I made is I used only 4 chicken breasts, but kept the other amounts the same to have a saucier chicken. This is no gourmet style meal, but if you're looking for a no-fuss, cheap, and fulfilling meal, this is it! It takes all of 2 min to throw together chicken and soup mix. I prepared some egg noodles and spooned the cheesy chicken over them. Makes a great & simple meal.
