About this Cook
I live in Calgary, AB with my partner Aaron, our son Joshua. We jointly own a home with my father and we share it with our goldie Angel, and cats Bear and Honda. I have been cooking and baking since I was 9 yrs old and like to experiment with dishes.
My favorite things to cook
Anything to do with pasta or chicken. My father and partner are avid hunters so now I get to figure out recipes to do with venison.
My favorite family cooking traditions
My mom is a great cook although she says she isn't. She make the best darn chicken and gravy that I have ever tasted and can not duplicate. She also has a knack of making the best pie pastry that again I can't duplicate.
My cooking tragedies
This is a doosie. I was about 16ish and my mom asked me to boil the leftover turkey carcass from thanksgiving for soup. At the time, we had a glass top stove. Well, my SIL came over and we got to chatting outside and the next thing I knew, the smoke alarm was going off, my poor dog whining at the storm door. Needless to say, I opened the door to a cloud of smoke. The pot had boiled dry (I was positive I turned it down before going outside) and was melting on cooktop. As a result the cooktop even broke. Well, we were able to turn off the stove, get the pot of and threw it outside. I opened up all the windows and prepared myself to call my mom at work. She took is surprisingly well, she was more worried about me not the house and thankfully, no fire had started. In the end, my mom got a newly decorated kitchen out of it as the house reeked of acidric smoke and our house insurance covered a majority of the damage. Whole Wheat Carrot-Raisin Muffins
Pretty good, surprisingly light considering no eggs. A little on the bland side, needs a touch more honey or maybe a bit of brown sugar. Used plain yogurt and added extra tsp of vanilla. Got 16 reg size muffins and cooked for 17 mins @ 350F. Will make again with adjustments and am sure it will be tasty with cream cheese icing.

Pumpkin Spice Muffins
These were ok. I modified it a bit. Used 1.5 cups W/W flout and 1/2 cup white, 1 cup pumpkin (homemade), 1 cup applesauce (homemade) as both are a bit watery, added a 1/2 tsp vanilla and 1/4 cup packed br. sugar. I was a bit concerned after whipping up the batter, cause it was very volumunious, thought it was going to overflow my bowl. A bit bland for my taste, need to bump up the sweetness just a bit, and needs more spice, just didn't taste like what I expected. Will make again, but will try Pumpkin Pie Spice and topping with spice/sugar or a streusel

Rhubarb Jam
Super yummy. I have an excess of rhubarb in my freezer and was wondering what to do with it when I came across this recipe. I had roughly 24 cups of rhubarb and got almost 10 - 500ml jars from 2 batches. I bag my rhubarb in 8-cup bags which is roughly the 2lbs as the recipe stated. I used the suggestion of orange juice concentrate as my oranges didn't yield that much juice. I also cut back on the sugar, adding half stirring and then adding more until I got it right sweet/tart flavor I like. I perked up the color by adding some red food coloring too. It took awhile to make, but all in all, this is a keeper in my new jam recipe box.
