Extreme Banana Nut Bread 'EBNB'

I have made this recipe twice. For some reason it does not rise right. The taste is perfect.my baking soda is fresh so I can't figure out what is wrong. Is anyone else having this problem?

Freezer Persimmon Jam

Fuzzy was a good way to describe this jam. I did let the persimmons ripen, and it is still fuzzy.The cream cheese did not help. Any ideas on how to save six jars of jam?
