I'm (originally) from Southwest Louisiana and this is a REAL recipe. Very good. Tried introducing it to my new home in Virginia, they thought it was odd, but liked it a lot.

Gingersnap Dip

Very good! Was a big hit! Changed a couple of things. (Can't leave anything alone.) Increased pumpkin pie spice mix to 1 1 2/ tablespoons, and added 1/2 can of pumpkin. Got several requests for the recipe. Thank you!

Creamy Blueberry Pie

Very good! Made this for the first time for Thanksgiving. Was a hit! I couldn't find fresh blueberries to save my soul, so I used frozen. Thawed and drained them in a collander first so the pie wouldn't be too soupy. And I can't stand "cutting in" dough. Just a pet peeve of mine, so I used the food processor. Easy and good. Thanks for sharing!

Awesome Broccoli-Cheese Casserole

Just tried this at Thanksgiving. Got RAVE reviews! Although I DID change just a couple of things. I don't like frozen veggies, so I used fresh broccoli, but the store was almost out, so I used half fresh broccoli and the other half was fresh califlower. Also, I am pregnant and trying to get protien anywhere I can, since I'm not a big meat fan, so I used 2 eggs instead of 1. And I love onions so instead of 1/4 cup, I used a whole medium onion. And I also used 12 oz. of cheese instead of the 8 called for in the recipe. It was very good and very easy. Thank you for sharing.

Smoked Salmon Spread

Pretty good. Served it with toasted sourdough cocktail bread. Next time I'll add chives and maybe just a pinch of cayenne pepper. Needed a tad more zing. But it was very good. Here's a hint to make chopping the smoked salmon easier: Use a large pizza cutter. VERY easy and the salmon doesn't slide around the cutting board like it does when you use a knife. Easy and quick.

Martha Washington Candies

Made these with a few changes. Added an extra cup of powdered sugar, and they didn't turn out too wet. Just right! Didn't want to get my hands dirty or have the heat of my hands affect the butter and make it runny, so I used a melon baller and dropped them on the wax paper. Turned out perfect little balls! Easy as pie! Quick too. Also dipped the first few of them completely in chocolate, but thought it was way too chocolaty...overpowering the rest of the candy. So, the remainder, about 80% of them only got the bottom half dipped in chocolate, then I drizzles a small amount on the top of the candies for decoration. Looked very pretty. I didn't think they took quite as long to make as everyone else did. Thank you for sharing this recipe with us Willi.

Country Soup in a Jar

I make "Gift in a Jar"s for people. This was, by far, one of the prettiest that I've ever made. Got raves from family, friends and coworkers on presentation. However, I always make recipes before I give them away. But this one I didn't. You see, I don't like soup at all. But I know a lot of people do, especially in the winter. I've never gotten a "bad" recipe from this website, so I figured "4 stars...GREAT!" Well, that must've been on presentation only, because numerous people have come up to me to tell me that the soup wasn't good and that the recipe wasn't correct. (I felt awful!) Apparently the liquid isn't adaquate at all. And when you do add enough liquid to make it "soupy" then it makes 2 VERY LARGE POTS of soup! Not bad if you are having company, but it should say that on the label. I won't make this recipe again.

Smoked Salmon Vodka Cream Sauce

Irish Potato Candy

These are absolutely adorable! Think that one time I may try a drop of orange food coloring in the dough and make them little "sweet potatos". They were very easy and very good, but I was suprised at how much time it took to roll them out and coat them in cinnamon. Took me almost an hour. But it was worth it they are so cute. Thanks for sharing.

Zesty Hominy and Cheese

I LOVE hominy! Only had 2 cans in the house, so used those 2 cans plus 1 can of the "summer crisp" corn. Brought it to work to share, since my hubby hates hominy (but not as much as he hates squash). Most people at work wouldn't touch it...(Never realized how many people have a "hominy phobia". LOL) But those who were fond of it loved it and asked for the recipe. Thank you for sharing.

Best Bruschetta Ever

My husband and I love brushcetta and I have tried a couple of recipes before, but there wasn't one that we could both agree that we liked. Well...this one did it! We both loved it. I left out the cheese and just put it on top before I tossed it in the oven, and I took the suggestion from other cooks to add a splash of balsamic vinegar. Thank you for sharing this fantastic recipe!

Colossal Cookies

After reading some of the comments about the cookies being "thin and the size of a dinner plate", I decided to make a couple of alterations. First instead of using 1/2 c. butter, I used 1/4 c. butter and 1/4 c. butter flavored Crisco. Then instead of dropping them by 1/4 cup size onto the cookie sheet, I used teaspoons so they'd be bite-size. I know that defeats the purpose of calling them Colossal Cookies. But they were just tasty! Thanks for sharing this recipe with us. (In addition I also used M&M's instead of chocolate chips for a little color.)

Frosted Oatmeal Bars

Recipe was indeed VERY quick and easy. However I found them to be a bit too sweet (this is saying a lot! I've got a terrible sweet tooth, didn't think there was such a thing as "too sweet".) I may make them again, because they were so quick and easy, but next time I'll add a pinch of salt to the oatmeal mixture and maybe some crushed pretzels or chopped salted peanuts.

Barbecue Beef Cups

Apricot Chicken I

Wouldn't have thought to put this combination together. But it was very tasty, and super easy. Served it over wild, long grain rice, and we all agreed that the best part of the meal was putting the sauce from the chicken on the rice. Thank you for sharing this with us.

Irish Chicken and Dumplings

Made this for St. Patrick's Day (complete with food coloring enhanced green dumplings!). This was excellent. Even the kids loved it. (Suprise!) I did a couple of things differently though. First, I substituted chicken broth for the water, then instead of cooking the breasts then shredding them and replacing the shredded meat. I just chopped the breasts into very small pieces BEFORE cooking, and tossed them in to save a step. This was a big hit and I'll definatly try it again.

Burrito Pie

Excellent recipe! Thank you for sharing. Made it for my husband and myself for dinner and it made SO much that we wound up eating off of it for 3 days! Will definatly make it for company next time. Wouldn't change a thing about the recipe!
