Easy Roasted Pork

The flavors of the sauce did not permeate the roast. Could only taste the apple at the edges. The amount of sugar was a bit much with the applesauce. May try again, but with perforating the roast so the flavors of the sauce can seep into the meat.

Cheesy Potato Casserole

Awesome & simple!! I used the sour cream & mayo combination. The store was out of ham so I chopped up a smoked pork butt. I also used the Ore Ida O'Brien hash brown frozen potatoes and put the bacon bits on top. I raised the temperature to 375 because the hash browns were frozen. Took this to a potluck and it was a hit!

Spicy Rapid Roast Chicken

This was absolutely wonderful. My hubby is VERY picky, and he loved it. I omitted the cayenne cuz he doesn't like spicy. Next time, I will use a roasting rack to keep the bird out of all the grease (I kept the skin on).

This was a refreshing side dish. I used pineapple chunks instead of crushed; I thought it was easier to eat this way. Might try using yogurt instead of sour cream next time.

Pumpkin Puree

This was simple and worked great. I used smaller (softball-size) pumpkins and put them in the fridge overnight. This made the flesh easier to scrape out and allowed the shells to harden again. Had I thought about this ahead of time, I could have used the shells for presentation (like small bowls or poured wax into them to make candles).

Thought this was quite good and easy. I used cayenne and chili powder to sprinkle and Louisiana Hot Sauce. It definitely had bite, though I would suggest putting sauce on both sides tho.

Bacon Cheeseburger Upside Down Pizza

Seasoned the ground beef as previously suggested, but still wasn't flavorful. I also added a layer of pepperoni under the cheese. I also used a low-carb bake mix instead of flour to lower the carb count. My family liked it enough to try it again, although I will try a mixture of italian sausage and ground beef next time.
