Poppy Seed Dressing II
This is very easy to make and very delicious! I served it over a romaine lettuce salad with mandarin oranges, blueberries, cashews and swiss cheese. I also cut down the sugar to 1/2 cup. I could have even gone with a little less sugar, but since this was for company I didn't want to play around with it too much. Some people were saying they used less onion than called for. Perhaps they misunderstood the recipe? It is not the onion you put in--it is the onion JUICE. I wasn't sure how I was going to get the juice out of the grated onion but I just picked it all up in my hands and squeezed it into a bowl. Worked great!

Creamy Buttermilk Dressing
This is a nice buttermilk dressing. It was no thicker than a bottled ranch, and I thinned it down slightly by adding a little more buttermilk. I thought the lemon flavor was a bit to strong, so next time I'll either cut back on that or try the rice vinegar to see what that's like. My very picky daughter likes it and that means I'll be making it again and again!

Simple Mexican Rice
Very good. Just the right amount of spice for us. Could easily increase the heat if you wanted. This was just as easy, if not easier, than a box but tasted sooo much better. Fresh and homemade cannot be beat.
