Key Lime Pie VIII
I used the crust recipe from Aussie Lime Pie and this filling recipe. It turned out AWESOME and got rave reviews from our Bible study group! = )

Self-Filled Cupcakes I
I really liked the flavor and idea of this recipe, but I didn't like the way that the "filling" sunk to the bottom. I thought about baking the 1/2-full cupcakes for a few minutes first (just long enough for the batter to set up), then the cream cheese mixture followed by the remaining batter, then finish baking them. I'm not sure how this would work, but I think the cream cheese layer would keep the very bottom from drying out. They were very moist when I made them and they actually soaked through the paper muffin wrappers. I used some foil wrappers as well and those looked much better.

Chicken Cordon Bleu I
I used processed pepper jack cheese, garlic flavored breadcrumbs, and leftover honey baked ham from Easter (this was because of several reviews stating that the recipe was good, but a little bland). I also made the honey mustard sauce from the "Aussie Chicken" recipe on this site (as recommended by other reviewers, but I left out the corn syrup and used sour cream instead of mayo). I will try "real" pepperjack cheese next time--I only had the processed kind on hand. My husband LOVED this recipe and told me that he is looking forward to the leftovers as am I!!
