Carrot Cake III

I baked this cake for a friends' birthday a couple weeks ago and it was great! Everyone loved it. I made a couple changes, which were cutting out the oil completely and replacing it with one cup of no sugar added applesauce, as well as omitting the pecans since I don't like them. I used the Cream Cheese Frosting II recipe from this site, which has been my staple cream cheese frosting recipe for quite some time now. I will make this cake again for sure. It was excellent.

Pumpkin Apple Streusel Muffins

These muffins are great! Very moist and flavorful. The only change I made was substituting 1/2 cup of applesauce for the vegetable oil to cut back a little on the fat and calories. I will make these again.

Flourless Chocolate Cake I

This cake was really, really good! It is very chocolaty and SUPER rich, so don't cut yourself a big slice, you will never be able to finish it. The texture is along the lines of a chocolate truffle. I served it to my husband and a couple of our friends and they all said it was excellent. I was even asked for the recipe. I only made one minor change to the recipe itself, which was using 18 oz. of semi-sweet chocolate chips instead of the bittersweet chocolate. I baked it in a spring form pan and didn't bother with the water bath. I also added the butter in all at once instead of one piece at a time. Make sure your butter is at room temperature before adding it to the melted chocolate. If it is cold the chocolate will seize. It is crucial to bake the cake a day before you plan to eat it. When it comes out of the oven the center is very jiggly and it needs plenty of time to set up in the fridge before serving.

Restaurant-Style Buffalo Chicken Wings

These turned out great! Very crispy and lots of flavor. Baked them in the oven at 400 degrees for 40 minutes, then put them on the grill for another 5 minutes or so. We added the sauce after we took them off the grill. Will make again.

Pumpkin Pancakes

These pancakes came out great! Very fluffy and tender. I pretty much followed the recipe, except I used pumpkin pie spice instead of all the individual spices. My husband and really enjoyed them and I will definitely be making them again.

Banana Cake VI

I made this cake for Father's Day and everyone loved it! It came out super moist with just the right amount of banana flavor. The only things I did differently were substituting light sour cream for buttermilk (didn't have any on hand) and cutting the powdered sugar down to 2 cups for the frosting. I will definitely make this cake again, but only occasionally, as it is a bit on the fattening side. Great recipe though!

Heavenly Angel Food Cake

I will never buy another angel food cake again! I followed the recipe exactly as written and it turned out perfectly. It was very moist and the flavor was excellent. I made this cake for my father's birthday and served with homemade whipped cream and sliced fresh strawberries for a lighter version of strawberry shortcake. Everyone LOVED it and asked to take home the leftovers.

German Apple Cake I

This cake was really good on the day it was baked. The top was nice and crunchy and the inside was moist. But after sitting for a day the cake got really, really mushy, which wasn't too appealing. And the longer it sits, the mushier it gets. I made it almost exactly according to the recipe. The only alteration I made was cutting the vegetable oil down to half a cup and adding half a cup of applesauce. I did not put any sort of icing or glaze on this cake. The only way I will make this again is if I have enough guests over to ensure it will all be eaten on the day it's baked.

Zucchini Brownies

Like many others have pointed out, this recipe turns out like a chocolate cake, not brownies, so if you are looking for a true brownie recipe, look elsewhere. I think that this tasted ok, but probably not good enough to make again. Besides the slightly "off" flavor, my main problem with this cake is that it was nearly impossible to spread the icing without the cake crumbling, so I had to leave the icing in it's own container and spread it on individual pieces as they were eaten. The icing is good and is the exact recipe that my mother has used for years. Again, this is a decent recipe, but nothing spectacular. I followed the recipe exactly as written.

Blueberry Buckle

Excellent cake! Made the recipe as written, didn't change a thing. Only complaint I have about this, and it's why I didn't give it 5 stars, is that it took 60 minutes to bake! I knew it would most likely take more than the 25-30 minutes stated based on the thickness of the cake, but I didn't think it would take double that time. Regardless, I will definitely make this again. The topping is very, very good!

Apple Cinnamon Oatmeal

I am eating this oatmeal right now and I have to say, it is pretty bland. The apples taste especially bland (and mushy) from boiling in the water and the oatmeal just tastes like plain old oatmeal to me. I think the recipe calls for too much water and not enough spices. A pinch of salt would probably help some too and of course brown sugar. I won't be making this again.

Chocolate Chip Muffins

I thought these muffins were just ok. I did change the recipe slightly by adding in 1/4 cup sour cream and 1 tsp. vanilla extract. Also increased the chocolate chips to 1 cup and used regular size instead of mini since that's what I had on hand. The muffins looked and smelled great when they came out of the oven. As they cooled they became a little hard on the outside and the sugar topping cracked and started breaking off to reveal a pale (but fully cooked) muffin top underneath. I think that sprinkling coarse sugar crystals on top would probably be a better alternative. When I tasted a muffin I immediately noticed it was not sweet enough and had a little bit of a floury taste. I will try to make these again, but next time I will increase the sugar that goes into the batter and leave off the sugar topping. I'm not sure the sour cream I added really did anything as far as flavor or moistness goes, so I will leave it out next time.

Taco Seasoning I

This is a great seasoning mix. I always keep a batch on hand. Way better than any seasoning packet you'll buy from the grocery store. The only thing I do differently is substitute dried cilantro for the oregano and add in a little cayenne pepper.

Sour Cream Coffee Cake III

In my opinion this coffee cake is just average. I followed the recipe exactly as written except I didn't put the streusel in the middle, only on top, and there wasn't enough of it to even cover the entire top of the cake. I would definitely recommend at least doubling it, if not tripling it if you want streusel in the middle and on top of your cake. Also, the cake needed to bake for 50 minutes. It was still a little gooey in the middle after 40 minutes in the oven. I don't think this cake is good enough to make again. I'll keep searching for a better coffee cake recipe.

Banana Muffins II

These muffins came out very moist and delicious! My husband and I both enjoyed them. I made a few additions to the recipe which were adding 1 tsp. each cinnamon and vanilla extract as well as 2/3 cup semi-sweet chocolate chips. Will definitely make these again.

Golden Yam Brownies

Very unique recipe! Baked this last night and my husband and I both thought it was good. I wouldn't call these brownies though, it's cake. I followed the "cake" part of the recipe exactly as written. It came out very moist and I didn't feel it was too sweet as some others have stated. As for the icing, I originally made it according to the recipe, but when I tasted it something was missing. I added 1/4 tsp. of vanilla extract and then it was perfect. I'll probably make these again.

Satiny Chocolate Glaze

I made this glaze to top the Too Much Chocolate Cake from this site. Didn't feel like going through the trouble of using a double boiler, so I microwaved it in a pyrex measuring cup. First for 30 seconds, then stirred it and added the vanilla extract, then microwaved it for another 30 seconds and it was done. It was definitely easy to make, but I thought it could have been a little sweeter. If I make it again I will use milk chocolate chips.

Too Much Chocolate Cake

This cake wasn't quite what I expected. It came out with more of a brownie texture than a cake texture. I pretty much followed the recipe exactly, except I used light sour cream and mini chocolate chips. It actually took 1 hour and 45 minutes to bake! I'm really not sure why, but I'm still astonished by that. I topped it with Satiny Chocolate Glaze from this site and served it as one of the deserts at a party I was hosting. Some people loved the cake, others thought it was just ok, which is why I rated it 3 stars. I may or may not make this again, however, I'd be interested to see what a vanilla version of this cake tastes like.

My Amish Friend's Caramel Corn

Made this last night with my husband. We followed the recipe exactly, except for using butter instead of margarine, and it came out great. Didn't have any problems at all. Used disposable baking pans bought at the dollar store, which I sprayed with cooking spray so nothing would stick to the pans. I thought 2 cups of peanuts was a bit much and the amount should be scaled down a bit, but my husband thought they were the best part. I'm sure I'll be making this caramel corn again, especially since I was planning to bring this to a Christmas Eve party and don't think it's going to last until then. Maybe next time I will drizzle melted chocolate on top. YUM!

Frosted Banana Bars

My husband and I agreed this was a great recipe, but I wouldn't call them bars, it's a dense cake. I was expecting that though after reading the reviews and was looking to make a cake rather than bars anyway. I baked it in a 9x13 pan for 40 minutes and it came out very moist with plenty of banana flavor (I used 3 large bananas). I made Cream Cheese Frosting II (halved the recipe) from this site to ice the cake. The frosting was excellent. This cake would also be very good without frosting. I will make this recipe again.
