Manhattan Style Clam Chowder

Mmmmm....I 'fixed' it up a bit according to previous reviews. Additions included; more clams, clam juice, way more celery, chopped onion, more hot sauce and fresh thyme. I really liked the fact it made a large amount, great for the freezer and leftovers! I really like the creamy white clam chowder as well, but I thought this one was better and healthier. Will make again with the changes I made.

Zucchini Pineapple Loaf

Not pineapple-y enough for you? Make a glaze using the juice from the pineapple and either white sugar or confectioners sugar. I used a whole can of pineapple which left about 1/3 cup juice to mix with two tablespoons of sugar and poured over top of the hot loaves when they came out of the oven. Not moist enough for you? Make sure you DO NOT take the moisture out of the zucchini! Also, when you compare ingredients to other recipes that have rave reviews about their loaves being moist, you will see that there is a larger percentage of oil in moister loaves. Add a wee bit more oil or applesauce to moisten it up a bit. I made according to directions with the pineapple glaze and it was quite moist and had a nice sweet pineapple taste!

Coconut Macaroons III

Super easy and doesn't require much time or ingredients. I melted milk chocolate in a sandwich bag and cut out the corner to drizzle it on the macaroons. Next time I make these I will double the recipe.

Cranberry Pistachio Biscotti

Delicious! I doubled the recipe and made 3 logs that were a little bigger. In the beginning I was frustrated because I could not find pistachios that were shelled and it was time consuming and hard on the fingers to shell that many pistachios but had forgotten all that by the time I tasted these! I used my favorite Wusthof knife to cut these after the first bake and had no problem at all. Those pistachios didn't stand a chance. Definitely use your sharpest, non serrated knife. I am going to make this recipe again but going to use dried cherries and almonds just for something different. These were perfect as they are though.

Creamed Spinach II

My 5 star rating comes from the fact that I have never had creamed spinach before and after trying it only this one time, I know I want it again! I added chopped onion, garlic and a small amount of parmasean as per other's suggestions and I would definitely do that again.

Delicious Pineapple Muffins

These muffins were alright, I found them a little bland or doughy tasting. The topping makes them better. They stuck like crazy to the paper cups even though I sprayed them with non stick spray before pouring the batter in. We had to eat these muffins off of the paper! Any other suggestions to avoid this in the future would be appreciated.

Rhubarb Muffins

The topping is what makes these delicious, make sure to make more than recommended so you have enough to go around. I ran out with two muffins left (and I used sparingly) and those two muffins left something to be desired. I loved the rhubarb though, cut mine into 1/2 inch pieces so they were large enough not to 'disappear' as some users experienced.

Banana Sour Cream Bread

This bread is good, a little lighter than how I like my banana bread to be though. I was hoping that after using all that sour cream, I would be able to taste it, but not even a hint. :o( This is definately not a recipe that I would throw out, but I do prefer the EBNB (Extreme Banana Nut Bread) recipe off of this site better.

I am only giving this one four stars because I made it exactly according to recipe and it wasn't as good as expected or as other reviews stated. I would make this again, but it's a lot of work for something that doesn't make you go 'MMMMMMMMMMMMMM...'

Spicy Rapid Roast Chicken

I always put the spices with some butter underneath the skin to ensure that the meat picks up the flavor as I did with this recipe. This is a brilliant way to cook chicken, I will never go back to my old method of 350 degrees!

Broiled Tilapia Parmesan

Mexican Bean Salad

Refreshing, healthy and deeeelicious! Made exactly according to recipe, the only thing I will do to suite my tastes a bit more is add some chopped tomato. If you can't find cannellini beans (which I couldn't either) Great Northern beans or White Kidney beans make an excellent substitute.

Fresh Asparagus Soup

Delicious! Made exactly according to recipe and I really liked it. To avoid that stringy texture of the asparagus, simply snap the ends off by holding firmly only at each end of the asparagus and bending until it breaks. The asparagus will snap off where that dryer, stringy texture begins. Discard the butt ends that come off. I did listen to earlier reviews and let it sit for a few hours in the fridge which helped as it was ready for dinner when I was! Definately recommend making according to recipe before you rate it.
