Eggplant Pizzas

YUM. So good. I love eggplant, and pizza, so this was a winner for me!! I did not fry the eggplant - just brushed on some olive oil and baked it for approximately 15 minutes first, then put the pizza toppings on and put it back in the oven. Loved it and will make again.

Summer Nights Eggplants

Left out the bread crumbs, added Italian seasoning, stirred the feta into it before filling the shells, and baked. It was FABULOUS. I loved this dish and will make it again and again. YUM!

Royal Icing I

Used this for icing sugar cookies and it worked beautifully. I used vanilla extract, as that is what I had on hand, and it was delicious. This will be my go-to sugar cookie icing.

Simply Traditional Lasagna

Served this for dinner last night and everyone RAVED about it. I used less pepper and real onions. Other than that, everything else was the same. I assembled it one night and cooked the next night for dinner guests. A keeper!

LOVE this salad! Used less sugar, no poppy seeds (was out) and it was still great. I usually add feta cheese. Has become my "go-to" salad for work potlucks.
