Company's Coming Coconut Tofu Soup

Better than most coconut soups I've tried. Putting it together took longer than expected, so prep ahead of time. The lime flavor is potent, but the soup is very good. Substituted zucchini for the mushrooms.

Simple Scones

My first attempt at scones and they were so good I delivered a batch to my foodie friends, who are very picky. Next time I may try a food processor, as others have suggested. I made mine with frozen blueberries and they were great!

Slow-Cooked Tamale Casserole

I used soy crumbles, and tomatoes with jalepeno peppers for more kick. Cooked on low rather than high for recommended time. DH and I both like it, but our daughter did not. DH called it a keeper. Will make again.

Very easy, and easy to work with, but was chewier than I'd hoped. I prefer a crispier pizza crust, and I even rolled this pretty thin. Husband really loved it, though, so will make it again.
