Mild Cheesy Chicken Enchiladas

OK, I really liked this... but of course I had to change it a bit. I was missing some of the ingredients and I was doubling the recipe so here is what I did... cooked the chicken in slow cooker in broth overnight, so it was REALLY tender and shredded it. Awesome start. Then I took the onion, chicken, and a packet of taco seasoning and cooked that per directions on the packet. I mixed that filling with some cheese and put it in the middle of the tortillas. I stuffed them really full because I had a lot of chicken! Then mixed the sauce per the recipe but I didn't have enough sour cream so I put some heavy cream to make it stretch. I also didn't have enough cheddar cheese. But it turned out GREAT anyway! Made for friends and they LOVED it.

Lemon Lush

Wow, for simplicity and ease of preparation I give it 5 stars! For taste, I give it 5 stars! Made this for my in-laws and they were fighting over the last bite. Made per recipe, without adding additional lemon because they didn't have it at their house, but I could taste the lemon from the pudding. It was SO good!

Old Fashioned Potato Salad

I used dill pickle cut up very finely instead of the sweet pickle relish, and left out the celery and egg (personal preference). I took another reviewer's suggestion and grated the onion and that was a really good idea. I used a bit more mustard and it turned out quite delicious. I am not a fan of potato salad but I even surprised myself and really liked this.

Glazed Meatloaf II

This has become our new favorite meatloaf. I have actually been using this recipe for some time now and just now got around to rating it. We love it, it is moist and flavorful and the lemon adds an interesting *something* that guests will say, "what is that flavor"? Yummy!

Super Moist Pumpkin Bread

Very moist, very tasty pumpkin bread. I loved the addition of coconut milk but did not put additional coconut. It was gone so quickly. With my extra coconut milk I made another batch of this bread!

Mandarin Pork Roast

We loved this recipe. I made a 3.5 pound boneless roast and cooked for 1.5 hours on 325 then pulled out and it was done already (read 160 degrees). So I was worried that if I put on the glaze and then cooked again it would be dry - but no worries. I just turned the temp down and roasted for another 15 min on about 300. It was juicy, sweet, savory, and delicious! I did forget to put the oranges on the top, I meant to but forgot. Still beautiful, still yummy!

Ham, Potato and Broccoli Casserole

This was OK. I scaled down and put in a smaller dish otherwise we wouldn't eat it all. The kids looked skeptical but eventually picked out the ham and a piece or two of broccoli - leaving the potatoes to swim on their plates. I thought it tasted pretty good but the appearance wasn't much to be desired. I may make this again but not for a while.

Yellow Chicken

Our chicken turned out wonderfully moist, but I just couldn't taste the flavorings. I even pierced the skin of the chicken and brushed some glaze over the chicken before putting the bacon on, then brushed it some more and let marinate in the refrigerator for several hours. Perhaps doubling the glaze would help? That said, everyone still loved it.

Molten Chocolate Cakes With Sugar-Coated Raspberries

I omitted the raspberries but this cake was amazing. We had it for a special romantic dinner for "just the two of us" and I wouldn't share my leftovers with the kids for anything.

Strawberry Bread

This bread turned out nicely, I divided it between two pans of different size and misjudged how long th e bigger pan would take. Even though the toothpick came out clean it still sank in the middle and I had to cut off that part to serve (we still ate it, it tasted delicious!)Great recipe.

Frosted Banana Bars

Wonderful way to use up overripe bananas. I used them for my preschool class for valentines day so I cut them using a heart shaped cookie cutter and used red sprinkles to make them festive. Delicious, slightly sweet thanks to the frosting (which is to die for). Highly recommended!

Leftover Turkey Casserole

We really enjoyed this, but I changed it some. I used a smaller pan, based on the amount of leftovers I had. I layered frozen veggies, turkey, 1/2 soup mix (only used one can of cream of celery mixed with sour cream), 1/2 stuffing, cranberry sauce (sounds gross but really added a NICE flavor to the dish), turkey, soup, stuffing, leftover mashed potatoes, and on top, gravy. WOW was it nice. My husband practically licked his plate! It was plenty moist and flavorful.

Turkey Tetrazzini II

I thought this was a very good recipe. I didn't have any spaghetti on hand so I subsitited shells and had good results. I also added a half bag of frozen veggies and mixed in. I had a block of provolone cheese handy so I used some of that and got big flavor for little cheese and cut back the parmesan a bit. It was creamy and delicious - the kids ate it all up. I also added some bread crumbs on top to make it look like a tetrazzini! Yum!

Zucchini Brownies

I love these - but beware - don't use splenda to make them, they don't come together. They came out of the oven a crumbly mess. Tasted good but not to easy to eat! My kids love them and think it is funny they are eating zucchini! Great recipe.
