Corn and Black Bean Salad
As others have mentioned, the dressing is right on. I also add about 1/2 cup of red onion for a little extra zip.

Pan-Fried Asparagus
I've made this one many times and it is wonderful. May want to be a little conservative with the salt.

Carrie's Bruschetta Appetizer
Made this as an appetizer for some very picky eaters and it went quickly. I love the addition of the feta!
