Chickpea Soup I
This was just an okay soup recipe. Very healthy, but not a lot of flavor.

Shrimp Scampi Bake
Butter, garlic, shrimp...what's not to love? Be careful about overcooking the shrimp. I would even suggest checking on them after only 10 minutes. I also found that this recipe called for way too much butter. If you're not serving pasta or potatoes or rice to drizzle the butter on, use less of it.

Baked Spaghetti I
Yummy! My 3 year old really loved it, too. We don't eat hydrogenated oil or MSG, so I subbed Imagine Portabello Mushroom soup for the cream soup, and it came out great. I used about 12 oz. of soup total and left out the water. I also used red instead of green peppers, mozarella instead of Cheddar, and a can of tomato sauce instead of diced tomatoes. I added garlic powder and fresh basil to round out the spices.
